I received a set of four bottles as a hometown tax payment from Nikaho City.
The first bottle is a raw sake, so I chose winter.
It was delicious beyond my expectations.
I think it was the first time I felt the goodness of Yamahai.
It is a well-balanced sake with a distinct lactic acidity and a strong umami and sweetness.
I liked it a lot and drank it easily.
While there is a pattern that some raw sakes are not to my liking, this one has an excellent balance of sourness and umami-sweetness, giving me the impression that it is well-balanced among raw sakes.
I want to try it warmed, and it's getting harder and harder to find the right time to open the other three bottles.
