On New Year's Day this year, we started with a comparison of Jikin.
This is the first time for me to try Kimoto, but I feel that it is a carefully made sake like Jijima.
Compared to the Omachi that we compared it to, I thought that the Yamadanishiki seemed to have a different cleanliness.
However, perhaps because of the Kimoto origin, Jishin's Yamadanishiki has a spine, or strength, or perhaps a gentle yet assertive character.
I'm embarrassed that I was pulled in by the specs, but I was happy because I prefer it to the regular Yamadanishiki.
