We are a little excited to have a hard-to-find sake. We were able to obtain it through a lottery due to the low annual production. The sweetness comes first in the mouth, but the aroma is mellow and refreshing, and it is easy to drink. I think it is a bottle that can be drunk easily. Tonight's sake accompaniment was grilled three kinds of cheese and bacon with honey and black pepper (the three cheeses are a combination of Japanese and English cheeses, and the bacon was grilled with honey and black pepper). (The three cheeses are crispy grilled Parmigiano-Reggiano, smoked cheese, and cream cheese with dried bonito flakes and soy sauce. The other dishes were sashimi and grilled fish, but the three cheeses paired well with the bacon grilled with honey and black pepper.

The mouthfeel is smooth, so it tastes super refreshing without much of a sake feel at first sip. I think the taste of the sake will change greatly depending on the sake accompaniment. By the way, tonight's sake accompaniments were yellowfin tuna sashimi and and shiso-marinated swordfish with sudachi vinegared sauce. The chewy texture of yellowfin tuna with the taste of soy sauce, The chewy texture of the yellowfin tuna, the taste of the soy sauce, and the namban-zuke of the swordfish paired well with the Toyo Bijin. The taste of the rice was very good. It is a perfect sake for those who prefer a light and dry taste.

The mouthfeel is clean and refreshing. Since white malted rice is used, it has a slightly acidic and light flavor, and goes well with even slightly rich dishes. Tonight, I am drinking it with my child. For the sake, I served steamed oil sardine with white wine, Cream cheese and dried bonito are sprinkled on the top. A little bit of soy sauce to taste. It is still hot and humid, so I like to drink something with a sour taste. is a good choice.

The taste is refreshing, and the rice flavor that is typical of Aizan comes in gently afterwards. At our house, tonight's side dishes included seafood and vegetable tempura as well as other Japanese dishes, and we enjoyed it as a mealtime sake.
