This sake is a collaboration product between Toyo Bijin's Sumikawa Sake Brewery and Yamaguchi Prefecture's regional trading company Yamaguchi.
The mouthfeel is fruity, reminiscent of a melon, with the flavor of rice and a hint of acidity.
It is sweet, but not too heavy and does not linger too long.
Tonight's entrée was beef tendon radish, a staple dish in our house.
We enjoyed it topped with leek and poppy seeds.
