New Year's Sake (4) Evening
The fourth bottle of the day was Shinmasa Cosmos.
The mouthfeel was a little drier than the ecru, and a little bit of an eggy taste lingered at the end.
It was a little dryer than the ecru and left a bit of a lingering eginess at the end.
I thought it would have been better to let it mature a little more in the refrigerator before opening the bottle.
I think it would have been better to open the bottle after maturing it in the refrigerator.
Next time I buy this wine, I would like to let it age for a couple of years before drinking it again.
