It's been a long time since I've seen Hiran. Among them, Saido is a first for me. It is a sake with a fruity citrus acidity in the mouth, colored by the umami and sweetness of sake made with a fresh yeast stock, and deep in flavor.

Today, when autumn is just around the corner, I kept this summer sake in the refrigerator for safe keeping and missed the timing to drink it. The mouthfeel is reminiscent of green apples. It has a very good balance of ginjo aroma, sweetness, and acidity, with a refreshing aftertaste. It is a ginjo-shu, so you can feel a little bit of alcohol, but I think it is the best sake to drink during the hot summer season. It is the best sake to drink during the hot summer season.
