Kangiku is no longer a definite must-have. We have great confidence in them, including the fact that we can buy them locally.
The last of the Kangiku summer sake trilogy. Sorakai→Aokkai→Ookkai. The subtitle of the trilogy is "ARRIVAL" and it is now complete.
Kukai has a pronounced acidity, Aokai has a gentle and clear flavor, and Chokai tastes like a middle ground between the previous two. The Kukai's acidity is calming and its umami has been fully absorbed. The juicy umami and the bitterness at the end are common to the trilogy.
I am very happy that I was able to enjoy all three bottles in one bottle this summer. I hope I can buy a bottle of chrome at the end of the month!
