This is the Shinsei we got at the UTAGE.
It is the first No.6 to be opened.
The aroma is a combination of grapefruit and lactic acid, and the fruity acidity is the first impression.
The taste does not change much in the mouth, and the acidity, sweetness, and umami become one lump, soaking into the tongue and disappearing quickly.
Although this is the first time for us to taste this sake, it is a bottle with a core of deliciousness and a high degree of perfection.
I paired it with mimolette cheese because it had a similar sensation to the acidity of cheese.
