Cold chrysanthemum white silver sea, gone in 3 days 😭.
Now for a change, sake nouveau, the new sake!
Last year I was curious about it but the timing wasn't right and it was heki-ban, but this year I was able to pick it up.
My fridge is overflowing!
The aroma is subdued, and when you put it in your mouth, the fresh acidity and fruity sweetness typical of new sake fills your mouth. A slight bitterness can be felt in the middle part of the bottle, but it is soon replaced by umami and gradually soaks into the palate.
Hououmida has a great sense of stability and perfection. Heki-ban was juicy and delicious, but I love this one too!
