Here are today's drinks 💁. It is Tenjo Mugen Junmai Ginjo from Miyagi Prefecture. It has a gorgeous but mild aroma and goes down smoothly on the palate. It is perfect for long autumn evenings as you will not get tired of drinking it.

We opened today's drink 💁. It's Sancho 2023 Hozasu Gonozao Special Summer Limited Fuzhensai from Kumamoto Prefecture, Japan. The bottle was opened with a pop, so some caution is required. ⚠️ The aroma was like an aged plum wine, and in the mouth it tasted like a white wine. It also had a slight piquancy. I think this would go well with roast duck. It's still very hot, so this kind of thing is delicious 😚.

Today's drink of the day is opened here 💁. It is a Junmai Ginjo AKI Owl from Mie Prefecture. The aroma is not so strong, but in the mouth it tastes like green apple and has a chili-like flavor, and in a good way, it is a fresh sake that is not like an autumn sake. I would like to try other labels.

We opened today's drink 💁. It is Rice, Agave and Tsuchida hops from Gunma Prefecture. It was so energetic, it took me about 10 minutes to open it😅. It tasted like a mixture of Ramune and Calpis (there was something else) and was perfect for summer. ☺️

July 3 is Wakanami Day, so we opened this bottle 💁. Wakanami Honjozo from Fukuoka Prefecture. One sip and it is soooooooooooooooooooooooooooooooooooooooooooooooooooooooooooo good! It has a juicy to slightly bananas & umami and bitterness. This is, to put it mildly, the most delicious 😋. Next time I find it, I'll probably buy it in bulk. I'd like to try other sake from this brewery then: ☺️

Today's beverage of the day is this one 💁. It's a 3 grain Daimine Summer no Otosore from Yamaguchi prefecture. I love this one super much because it's sweet, sour, and schwarziness 😍. I would definitely like to try the others.

I felt it was weaker in many ways than the Amami of the past, but it seems that the key elements have been passed down to the next generation with the cooperation of various breweries. We are looking forward to the future.

Here is today's drink 💁. It is a Hakkaizan Daiginjo from Niigata Prefecture. It has a light mouthfeel with just the right amount of ginjo aroma, yet it has a decent umami flavor. It is distinct from the so-called "light and dry" style, but I personally prefer this one.

Today's beverage of the day is this one 💁. It is Hakutsuru Junmai Nigori Sake Sayuri from Hyogo Prefecture. It caught me by surprise in a good way. It is very much like yogurt. In my opinion, it would be good with sweets 😊. Rice and koji fell in love like apples and honey. Hideki, I am very impressed!

I got the impression that it had a good balance of umami, acidity, sweetness, and bitterness, and the best flavor blossomed at a temperature of a little over 10 degrees Celsius. It is available only by reservation, and it seems to be a raw sake only available at this time of the year.
