It is Senpyo Junmai Sake Harukasumi from Aichi Prefecture.
I bought it last year and let it sit for a while, and while the acidity and bitterness have increased slightly, the overall flavor is mellower and more banana-like.
I hope Mizutani Brewery will make a full recovery soon.
