It is a Junmai Daiginjo from Mitsutake Shuzo from Saga prefecture, which is produced on an OEM basis.
The top aroma is mild, and in the mouth, it has a slight whiff of a green apple. The acidity and umami are not too assertive, and the aftertaste is refreshing, so it would go well with punchy appetizers such as minced fish tempura 👍.
