Immediately after opening the bottle, it impresses with its raw freshness and sharpness. On the second day, it is sweet and tasty. On the third day, sweetness and bitterness are present, and Kido is definitely good in a bottle.

I guess this is a little different. Is it a local version? The Aki Agari was good, but this might be great. It's pure rice, but you wouldn't know it even if it was called Junmai Daiginjo. It's also great with cheese.

Sake from Aizu, Fukushima. It's delicious. I drank it for the first time, but I could feel the high level of Aizu. The aroma is fruity and the taste is fruit. The sourness, sweetness and sharpness are to my liking. Aizu is not only Tobiroki.

Sweet flavor is in fashion, but Hidakami Junmai is a great sake that hides the sweet flavor and cuts through the sweetness with clarity. Ishinomaki's sake to match with fish. I love it!

Senkin's Opus, because it was delicious. Mimuro Sugi too. It has more of a sake feel than the Senkin. But it is very tasty with a softened sourness. When it's good sake, the size of the bottle feels small.

It's similar to Ozeki, but I think it's more mature because it's a hiyaoroshi. I like it best on the third day in a bottle because it becomes soft.

First of all, it is a new brand from Aizu, so I had high expectations. It has a ginjo aroma, and when I sipped it as a raw sake, I felt the sweetness was a little stronger and the alcohol aftertaste was longer. It's only just started, so we'll drink it as we find it.

Fresh and gassy and easy to drink. I was a little prejudiced against Nanada. This one is definitely good. It was brewed in January, so I guess a little sleep makes it rounder and tastier.
