Compared to the last time we drank this wine, the sweetness was lessened and a subtle gassy feeling was added. Compared to the Junmai Ginjo from the same NEWBORN series, the ginjo aroma and roundness were less pronounced, but this one was more refreshing and easier to drink.

The impression is that it is light, dry, and excellent as a food sake. When served cold, the aroma is almost imperceptible, and while it is refreshing, I personally find it to be a bit lacking. I drank it cold or chilled, and as the temperature increased, the umami of the rice became more noticeable and the flavor increased.

Tasake, which taught me how good sake could be, and Jyushidai, which surprised me with how good sake could still be. A few years ago, it became difficult to obtain at my favorite izakaya and the price jumped more than three times, so I have not been able to drink it for a while. The wine has an elegant, fruity taste and a beautiful mouthfeel. I was impressed by its stable taste.

Unlike the Akabusu we have had so far, the dryness and very clear mouthfeel are impressive. It has a slightly effervescent taste, and the bitterness and moderate acidity make it a good food sake. Personally, I prefer Junmai sake to Akabu. [Postscript.] Two weeks after opening the bottle, the bitterness decreased and the sweetness became stronger.
