Unlike the Akabusu we have had so far, the dryness and very clear mouthfeel are impressive. It has a slightly effervescent taste, and the bitterness and moderate acidity make it a good food sake.
Personally, I prefer Junmai sake to Akabu.

Two weeks after opening the bottle, the bitterness decreased and the sweetness became stronger.
