The izakaya selected a new sake to go with tonight's fried chicken (Furusato, Oita). Three runs for Mr. Otani at the same time the bottle was opened! Keep up the good work JAPAN! ⚾️⚾️⚾️ I think it is classified as dry, but as the name suggests, the richness and mellowness of spring is delightful (I am not good at judging sweetness and spiciness, as I have a poor sense of taste). It has a nice sharp taste. I think it goes well with fried food, heavy and dark dishes rather than sashimi and such. After a while, the aftertaste softens while retaining its sharpness. More and more delicious. Since the WBC game time seems to be long, I will have to work tomorrow, but I might just finish the four-goupe bottle as is.

It may be far from the so-called "hana-yori" style. It is a bit stiff and dry, while still fruity. It is delicious! Even my wife, who is not a fan of Hana-Hanayoukasui, likes it. I wish I had gotten the normal one, which is not "Origami". I will enjoy it with chocolate while cheering for the second half of the WBC game against Korea!

Nothing but anticipation for Akabu SAKURA! I couldn't wait until spring to open it. I'm having it while cheering for the WBC. Good luck, Mr. Otani! ⚾️⚾️⚾️ It has a pleasant sweetness and a sourness like yogurt. I like it, I love it. I wonder what snacks would be good with it. I tried it with soft local dried taro from Ibaraki. This is also good👍

Clean and dry. I don't usually drink this type of wine. I had it with sukiyaki. The sharpness is perfect with sweet, spicy, and strong dishes. It may be a waste of money, but it could also be served with fried chicken or hamburgers.

Daiginjo received from Furusato. The pink "Izumo" was thick and sweet, but drier than that. However, its fruity and gentle sweetness may be suitable for any drinkers. I would like to try it with sashimi (bonito, scallops, etc.).

I received this wine from a hometown. It is sweet, rich, gorgeous and sharp. It is delicious. We enjoyed it with grilled and fried shiitake mushrooms, but we would also like to try it with oden and hot pot. Or, it would be good with sake, chocolate, dried taro, etc.

My first peach heaven. Pon! The bottle is opened with a bang. Mild sweetness, fruity and simple. A little bitterness and tingling comes later. It is very easy to drink.

Since "Kamiki (Kame) Gen" brewed with Kame-no-o brewing was delicious, we decided to try "Mansaku no Hana" (brewed with Kame-no-o brewing). It is more on the sweet side, but the sweetness is only slightly subtle. Right after opening the bottle, it is mellow, yet sharp and well-balanced. However, I cannot describe this complex flavor with my tongue and vocabulary. It can be enjoyed with food or just by itself. It is a little expensive for everyday drinking... 😂.

Clean, crisp and easy to drink. Well-balanced. Youthfulness, aroma, and a hint of sweetness that asserts itself, bringing a sense of splendor and congratulations. I am happy to drink it today. We compared it with Miyamanishiki Junmai Daiginjo Ooragarami (photo left), which was already opened a while ago. The Miyamanishiki has become milder after a few days, and the Yamadanishiki is more assertive. For today, the Miyamanishiki was the winner. However, as time goes by, the clarity that is typical of Yamadanishiki comes out. As the sake shop owner says, it is not a food sake, but a sake to be enjoyed on its own. It flows beautifully (too beautifully) from start to finish, with an indescribable gentle sweetness. Hana-yosu, it's still amazing. I like it. It's delicious.

Since the raw material rice is "Kame-no-o", this is a special upper "Kame" origin. It has a subtle acidity and soft sweetness. It is crisp and easy to drink from the start, and you can easily drink it with a meal. However, after a little while after taking it out of the refrigerator, it starts to have a peculiar taste and sharpness. This is an interesting change. I will add this to the list. After that, the peculiarity eases and the taste is stable, crisp and dry. I'll limit it to two cups today.

This year's Miyamanishiki is also delicious. Hachitan-Nishiki was also very tasty, but I prefer Miyamanishiki. The fruity and gentle sweetness continues gently and spreads. The pineapple is stable.

The sake maker chose it to go with fried chicken. We ended up having it tonight with okonomiyaki, beef stew, and bamboo shoot tempura. It has a sharp taste and good balance, and will be useful as an in-between-dinner drink.

If you let it get a little closer to room temperature and let it get some air, it changes its appearance! The banana feeling comes out early, and the subtle sweetness and the gentle flow to the aftertaste is still HANAIYOSHI. I am looking forward to Miyamanishiki.

I had it with hot pot at home. The initial sharpness of the cold sake and the gradual mellowness towards room temperature is dangerous 😁 I wonder if it is a result of the good balance of the sake. Kamotsuru always delights me, without a doubt. I am also looking forward to the spring orca.

We had the liquor store choose this to go with the smoked duck. It has a rather robust sake taste, perfect for smoked duck. It might be good warmed up.
