We compared it with Miyamanishiki Junmai Daiginjo Ooragarami (photo left), which was already opened a while ago. The Miyamanishiki has become milder after a few days, and the Yamadanishiki is more assertive. For today, the Miyamanishiki was the winner. However, as time goes by, the clarity that is typical of Yamadanishiki comes out.
As the sake shop owner says, it is not a food sake, but a sake to be enjoyed on its own. It flows beautifully (too beautifully) from start to finish, with an indescribable gentle sweetness. Hana-yosu, it's still amazing. I like it. It's delicious.
