May. Purchased at a liquor store in Saku City, where we visited Saku-no-Hana Sake Brewery and were told "they carry all of our products". At a large tasting, I was attracted by the "home-made paddy field" and made an immediate decision. When you put it in your mouth, you are greeted with a fine, strong tingling sensation, followed by a faint sweetness that quickly recedes without leaving any sake-like sensation at the back of your tongue. When I tasted it at the store, it was chilled and I strongly felt the character of the sake rice, but when I drank it slightly chilled, I did not feel the habit of the sake rice and it went on and on. I prefer it not too cold 😊. The flavor is light, so it goes well with a wide range of dishes. It is not too spicy, so it is easy to drink. I went for the Urasaku (Junmai) but it was already sold out and I was wondering what to do with it, but I'm glad to have a new encounter with it ✨.

Drinking comparison at an izakaya in Nagano. ▪︎ Left: Nakanori-san cocoromi Nakazen Sake Brewery (Kiso, Nagano) This sake was made using test rice (Shinko No. 555). Delicious with a refreshing acidity and a light feeling. ▪︎ Central: N-888 Niigata Meizou (Ojiya, Niigata) This sake was completed after 1,200 trials. It is more acidic and refreshing than Nakanori. It has a strong rice flavor, which one might expect to be wine-like. Goes better with vegetables than sashimi. ▪︎ Right: Figurine Fukuro-hozuri Bottle Enclosure Iinuma Meizou (Tochigi) The taste of kuro-hozuri is indescribable, and this sake shows it well. It has a sweetness and mildness that makes you feel the alcohol content of 17.5 degrees Celsius. You will drink it by accident. I will order it again! It's not that expensive, but it's also highly favorable ♫

At a soba noodle restaurant in Nagano. This is "Tsukiyoshino no Sora" by Wakabayashi Brewery. There were also "Midori (Junmai Ginjo)" and "Aka (Dry Junmai)", but I chose this one because of its clean and mellow taste. It has a refreshing sweetness and is easy to drink with no corners. It goes well with soba noodles. I drank it quickly and it was gone soon. Is it a local dish? It goes well with grilled soba noodles and char-grilled bamboo. ☺️

At Nagano station. I found them on sale and wondered what the difference was between them..." I looked at them with my finger in my mouth, and found a set of them to compare in the corner of the station. You know what you are talking about. Mamoru. It has a melon aroma and a fine tingling sensation on the tongue. It has a gentle sweetness, but it has a nice sharpness. [Breakthrough I see, it is a development of Mamoru. The tingling comes a tenth of a second later. The taste is fuller from the middle stage and has a sake-like feeling. Release. The tingling is no longer felt that much (just on the tip of the tongue), and the taste is mellower and lighter. I like Mamoru! But it's interesting because when I go back to Mamoru after drinking the three types, I feel the tingling fade away. I have a different impression when I drink them in the order of Ri-Ba-Mori. I think, "Oh, maybe I like the "Rip-Break" the best? Or maybe I like Mamoru the best. It's all about taste. My answer after many rounds. I like Mamoru 😊. Because I like tangy and fruity! But while drinking, the temperature changed and the expression of each one changed. Mamoru prefers it chilled. Rui prefers it at room temperature. Ri prefers it slightly chilled.

There is a heavenly corner at a 7-Eleven near Nagano Station. I chose a junmai sake with the sake rice specified. I immediately tried "Shinano no Kataribe". The label is very honest and likable. It gives a lot of information. The sake seems to have been made with the involvement of university students, which is another point that makes me want to support it. The taste has a nose full of rice, just like a junmai sake, but it is soft on the palate and has a grain flavor in the aftertaste, making it very easy to drink. It goes well with the pickled cucumber and celery we bought together. We had one gou (180ml) in no time at all.

Perhaps because it had not been stored properly, the second fermentation was going on inside the bottle and the lid blew off. Fortunately, nothing was broken and the contents did not overflow, but it was a good lesson for me to realize that this can happen if you are not careful. It tasted like a sparkling wine with the sweetness of rice, and with a good amount of shwash, it was irresistibly delicious. The snacks were pork patties, aged cured ham, fresh shirasu, and boiled garland chrysanthemum and enoki mushrooms. It goes well with both meat and light Japanese food.

I first had this sake in March of this year and it changed my concept of nigori sake. It was on sale at a local liquor store, so I couldn't resist and bought it. It was called "drinking yogurt for adults," and I think it really is true. I used to avoid nigori sake because I didn't like the taste of it being too sour or too heavy, but this one has just the right balance of sweetness and freshness✨.

We will have a Jōyō at the end of the meal. The sake rice used is 100% Aizan. It is soft in the mouth and has a subtle flavor that can be likened to pastel colors. However, when it reaches the center of the tongue, a refreshing acidity passes through, as if to say, "It's not just pretty.

After the Tenbi, we were served a sake from Miyazumi, which was entered in the sake competition. The sake is mellow and goes down smoothly, but it also has the strength typical of Japanese sake.

The third drink was Ryuki. I didn't expect it to be pink and was surprised when it came out, but I was excited. It has such a pretty color because it is made with red sake yeast🌸. The alcohol content is low at 10 degrees, and the sweet, fruity aroma and mildly sour taste like yogurt are delicious. Since you don't feel the alcohol, you might end up drinking too much.

The second cup is Aizu Chusho. It uses 100% Yumeko sake rice. It has a different flavor profile from that of the first cup of Nabeshima, and the seared cod roe goes down a treat.

Let's start with Nabeshima. It is said to be a classic series that expresses a classical taste using traditional No. 9 and No. 14 yeast. The sake rice used is 100% Shirakiku. I was happy to find it a little chili on my tongue. The flavor is spread out and crisp and delicious.

I heard a voice at a souvenir shop in Niigata Station saying, "I squeezed it this morning! I turned my leg 180 degrees to go to the Shinkansen terminal to buy it, even though it was five minutes before the train was to depart. Later, I found out that it is only sold on this day of the year, and I was thankful for the coincidence. I enjoyed the sake, but I wish I had taken a picture of the sake with the color of wild cherry blossoms.

I did not find it in a search for sake-no-wa, so I'll put it up front. I bought it at the top of Mt. The taste was robust but easier to drink than I expected. There are five sake breweries on Sado Island, and we compared sake from four of them. (1) Tenryohai Shuzo 2) Itsumi Sake Brewery (3) Obata Sake Brewery 4) Kato Sake Brewery The sake from the Hokusetsu Brewery was on a separate menu. All were delicious and we chibi-chibi-chibied our way through them. Sagatari and Niigata are so nice...
