Aroma
Taste Although it is described as super dry, it is rather slightly sweet on the palate. The characteristic of Shinshu water gives it a mild taste.
However, the aftertaste is spicy. The aftertaste is very spicy.
It is rare that it becomes hotter and hotter while drinking.

Nose: Sweet and sour aroma like apple on the palate
Taste: Not stated on the label, but it seems to be a draft sake. Unfortunately, it seems to have been open for a long time and has lost some of its gaseousness.
Overall impression: It is not bad, so if I have a chance, I would like to buy it and drink it at home.
Preference 70%.

Aroma: Thought it would be weak, but the in-mouth aroma is strong.
Taste: It seems to be refreshing on the palate, but gradually becomes bitter and pungent, making it feel heavy. It is a strange feeling.
Overall impression Although it says that there is gas like a draft sake, there is no gaseous feeling. Maybe the bottle has been open for a while. This may be the case when drinking at a restaurant,

Aroma: The gorgeousness typical of Junmai Daiginjyo and the freshness of the raw ingredients can be felt as indicated on the label.
Taste: When chilled, it is raw in a bad way. The gorgeousness of the daiginjo is lost. After a while, when it warms up a little, the sweetness becomes extremely strong. It is interesting to note that the taste changes drastically with the change in temperature.
Overall Comment It is a matter of taste, but I feel that the goodness of raw sake is lost when it is a Daiginjo class.
Preference 85%.
Color: Lightly cloudy. It looks yellowish in the bottle, but once it is in the glass, the yellowish color disappears.
Aroma: Fresh and fresh aroma. After a little time in the glass, when it gets a little warm, there is a sweet aroma of rice. Overall smells a little medicinal.
Taste: After a moment of sweetness, you immediately feel the spiciness from the gas that is typical of nama sake. The alcohol content is a little high, so the spiciness lingers in the aftertaste.
Overall impression: A good balance between the richness of the original sake and the freshness of the unpasteurized sake. The medicinal aroma was not to my liking.

Color Pale yellow
Nose: Slightly syrupy and sweet.
The lingering aroma is a bit aged, which is not my favorite.
It is not my favorite.
Taste: Sweet on the palate, but the spiciness starts to appear after swallowing. The aroma gives it a sense of maturity.
Overall impression: Because it is an April sake, it is not so much aged as it is matured,

Aroma: The aroma does not rise from the glass as if the nose is clogged. It is quite weak in the mouth.
After drinking, the residual aroma gradually reveals the ginjo aroma typical of nama-shu.
The taste is dry on the palate with a slight gaseous sensation that is inherent to nama sake. The aftertaste is softly sweet from the rice.
Overall impression: This is my first time to try this sake brewery and I would like to try other kinds of sake.

Color Lightly cloudy
Nose: Nut-like aroma on the palate. The residual aroma smells a little like alcohol.
My sense of smell may be dead because of the smell of cigarettes next to me.
Taste: Smooth. To put it better, it has a concentrated flavor,
Overall impression: Tastes like a special junmai that has been stored at low temperature.
Preference 75%.
Color: faint yellow
Smell
Taste: Aftertaste is a bit raw, which is strange since the label says it is "flame-brewed". The label says "Hi-iri", which is strange.
Overall impression: An extra hi-iru made with out-of-grade rice.
Preference 90
Color: Lightly cloudy
Aroma: Lightly cloudy, with a faintly sweet aroma and a hint of ginjo-koso.
Taste: Freshness and sweetness that seems to be raw, then switches to sourness.
Overall impression: The rice is flat polished, but the polishing ratio is unknown because it is not stated. Anyway, it is delicious.
Preference 90

Aroma: Sweet rice aroma.
Taste: Sweet but refreshing. It is good because it does not linger.
Overall impression: Shin Ginshu is still not well-known. I would like to drink it again, but it is made to order, so I guess it is impossible,

Overall impression: You're getting drunk, right? Looks like a honjozo, not what I expected from the label.

Aroma: Slightly refreshing, but also floral, as if it were a daiginjo. The lingering aroma is mellow and a little heavy.
Taste: Fairly sweet.
Overall impression: It is gorgeous, but the sweetness lingers, so you get tired of drinking it.

Aroma: The aroma of pure rice is overpowered by the smell of alcohol.
Taste: Similar to the aroma, the taste is stronger than the alcohol content. It is similar to Niigata's "light and dry" style.
Overall impression: Not really my favorite.
Taste 75
Color Clear and colorless
Aroma: A clean rice aroma typical of nama-shu.
Taste: The mouthfeel is too refreshing and not as satisfying as the aroma. Sourness appears in the aftertaste.
Overall impression: Goes well with fried or oily food.
Preference 75%.
Color Light brown
Nose: At first, you can smell a little maturing aroma from the nose, but the aroma becomes quite strong and assertive on the palate.
Taste: Sweet on the palate, with a slight bitterness and sourness as the mouth aroma becomes stronger and more assertive. The alcohol is not harsh, but it is thick and rich.
Overall impression: It is not suitable for drinking alone, but as a food sake, I think it goes well with a wide range of food. At any rate, it goes well with sashimi. It may be too much for light white fish.
