The aroma was fresh, the taste sweet and juicy. Surprisingly, there was also a sourness that made me feel a sense of sake, a sake that would not tire me out even during the hot season. It felt like summer had finally arrived! This is the sake I would like to drink with carpaccio and other summery, refreshing meals!

The concept of Hakurakusei is "the ultimate food sake. The atmosphere of Hakurakusei changes dramatically with different meals. At first, when I paired it with fish and tofu, I was impressed by its soft and gentle flavor, and how easy it was to drink without disturbing the meal. However, I was surprised when I paired it with bonito saketo. It was dry, sharp, and had a different impression from the Hakurakusei I had been drinking earlier. I was impressed again by the depth of the sake, and how the taste can change depending on the combination of the two.

I have not been drinking much of it because it is always available at the store, but yesterday I had a taste and it has become my current recommendation! (As a food wine). It is dry and has a refreshing impression. The sweet sake has a more fragrant impression, but Daishinshu has a beautiful aroma that lingers in the nose. The manager advised me to pair it with raw oysters. The high mineral content makes it a good match for raw oysters. I was surprised that the area is not famous for seafood. I think it is the best food wine that can quickly drain off the fat from meat as well as raw oysters!

I felt a bit of a strange taste when I opened the package, and thought, "What? I was a little disappointed. I like Junmai Ginjo (navy blue label) because it is easy to drink, so I was a little more disappointed than expected. However, the manager told me to drink it 3 days later, and to my surprise, it was easy to drink and I could feel the natural sweetness! Calm? Cleaner? It was more beautiful than the Junmai sake I had imagined, with the fruity taste of Tenpyo. I thought sake was amazing. It did not interfere with the meal and gave the impression of being easy to pair with it.
