This sake was recommended to me by a waiter at a restaurant in Sangenjaya. It is a version of Yukio's Aiyama, and it seems to be limited to the prefecture. I love Aiyama, so I was very lucky. I drank it thinking it was Aizan, but it was easy to drink and well-balanced, although the characteristics were not so strong. It is my favorite, but it was the best Yukio I have ever tasted. The waitress at this restaurant seems to be from Niigata, and they seem to have a variety of limited edition Niigata sake. The food was delicious and I would like to go again.

It has a clean, umami taste. It is light, but also mellow. There is a slight bitterness in the aftertaste, but it is not unpleasant. It has a good aroma that goes well with dishes with a little soy sauce. The label says it is dry, but I don't feel it that much.
