Impressed by the unfiltered, unfiltered sake from Tsukii Shuzo in Ibaraki Prefecture.
This junmai-genshu from Taketsuru Shuzo, where Touji Ishikawa Tatsuya used to work, is a perfect example of the powerful flavor of this sake. The expression "powerful umami" fits perfectly. It is a good sake with a lot of gusto.
I would like to try other sake made using the traditional sake brewing method.
