It is a delicious sake with a slightly sweet flavor. It has no sense of maturity and is moderately round. I felt an astringent taste in the latter half. I hadn't had Mizuo in many years, It was as good as ever. ‼️

Rice used is Hoshiakari from Akita Prefecture Hoshiakari is a rare sake rice developed by Tohoku Electric Power Co. I don't know how it came to be, but they are researching sake rice, aren't they? It has a gentle taste and a nice sharpness. As expected of Amanoto, it is delicious. ❣️

A light, umami-kuchi sake. It is lighter than regular fire-aged junmai sake. Overall, it is mild and this is also light and fresh. Elegant in the best sense of the word. Definitely delicious, but I prefer the fire-aged version!

Yui-like sweetness is still present. The balance of simple flavor and good acidity is exquisite. ‼️ I think there may be a hint of Sanzen Sakura taste in there somewhere, but I don't have the palate to understand that much. It's as delicious as I expected 😋.

After drinking the Omachi version before, I was eager to try the Aizan version at ‼️ It's been about 4 years since I had the urge to try the Omachi version. I finally came across it ❣️ and it's also a draft sake! As expected, it is fruity, fresh, and rich. The balance of sweetness, bitterness, and acidity is also excellent. The alcohol content is also moderate and delicious.

The rice used is Gohyakumangoku and Yukinosei. Yuki no Sei is the grandson of Koshihikari and is said to be the best for sushi rice. It has a slightly sweet taste with a slightly spicy aftertaste. It is more suitable for grilled fish than for sushi.

Rice used is from Tokushima Prefecture, Gin-no-sato. I found this at an antenna store in Shinbashi. It is not a classical sake, but it has a full-bodied, refreshing aftertaste that is typical of Japanese sake. It is easy to drink.
