Serve cold with a glass of sake. It has a sweetness that is the true taste of Fukushima and a deep and diverse flavor. Because it is made with live koji, the flavor changes quickly. The taste peaks 1-2 days after opening the package. After that, it has a slightly bitter and medicinal taste. This is a gem in which you can feel the breath of koji. Recommended for those who have a fast consumption cycle.

I received it as a parting gift from my workplace and use it for my daily evening drink. It is spicy for a Fukushima sake, with a clean aftertaste and a hint of sweetness. When kept cold, it is only spicy and tasteless, but when the temperature is brought back to around 15℃, it has a happy aftertaste, as expected of a famous sake from Fukushima. It was a shame that it took so long to find a good way to drink it.

This sake is produced by Kinnoi Sake Brewery in Miyagi Prefecture. It is very fruity, with a good aroma and good acidity. It goes well with fish, so it's certainly the perfect sake for a meal (development concept?). It's a good match for fish. It is relatively easy to recommend even to those who don't like sake. I ordered this brand because of its unusual name, but I would like to remember it.

This daiginjo-shu was sold for 500 yen at the local sake corner of Ito-Yokado. The moment you pour it in, you get a strong aroma of dry sake coming. It is just as I imagined. The moment you put it in your mouth, it has a pure watery taste reminiscent of melted snow, and then it has an aftertaste that makes you say "kaa". A small amount will satisfy you, and it is suitable for evening drinking.
