Sake Brewer's Secret Sake Shidane A fresh of fresh sake squeezed with gyururi. Only the brewers used to drink this freshly made sake, but now we can enjoy it too! It is a benefit of the progress of quality control technology. I can keep drinking it without any snacks.

Kanji Chie Bijin Hiragana Chiebijin And a new brand - CHIEBIJIN in alphabet It is brewed with white wine yeast. It has a gorgeous aroma and a mouthfeel like a dessert wine. But with a touch of rice. The concept is to enjoy it with oysters from Kintsuki. I really want to try it!

New Ottersai Polished 20-30%. As you would expect from Ottersai. It's a perfect sake for beginners. You can drink it easily without any trouble. There is no smell peculiar to sake. I wonder if the polished rice is used to make amazake... I hope there is no food loss!

It came out in the sake gacha of the sake mail order Kurand. Fruity and delicate taste made by a female toji. The concept of the gacha is also wonderful! I'd like to give it as a gift to celebrate something 🎁.

This is the first attempt at making an otter on a traditional sake starter and the number of available otters in Japan is very limited. It's a bit less fruity than the usual Otters Festival 45, and the balance was better. It went well with the okakame and mandarin orange kimchi 🍊

A drink I would recommend to a sake beginner. Good luck! It's easy to drink, with an alcohol content of 8% and a sake rating of -70! How can you get so much sweetness and fruity from just rice and water! It will be. I've registered the brand ☺️.

I received this as a souvenir from Hiroshima. The label is so cute from the back! It's sweet and easy to drink for a sake with 70% rice ratio! It's made with white koji, which has a sour taste and looks like it would go well with lemon 🍋. I want to eat oysters 🤤

A pure unpasteurized sake made from the white koji used in shochu. It has a moderately sweet taste and a refreshing aroma, and is well balanced. And I love the freshness that only raw sake can provide! Best😌.

Autumn is coming🍂 I tasted a few hiyaoroshi from several breweries and this was my favorite. Hiyaoroshi is said to mature and become more tasty as it gets closer to winter, and you can enjoy the change in flavor depending on when it is shipped. I'm also looking forward to the hiyaoroshi that's about to come out 🙌

I was attracted to the color of the label. It's a Junmai Daiginjo with 48% polishing ratio. It was relatively dry and refreshing. I guess there are a lot of sake from the Tohoku region that are refreshing. If you want to pair it with food, this is about right. Maybe it's just right.

We had it at a store that has a great selection of local sake in Osaka-Fukushima. It's insanely fruity and easy to drink! I still feel like raw sake is the best way to go.
