I have a connection with Hiroshima sake.
Sake with a clear outline
Sake with a strong umami flavor. くま吉First brand I've ever had.
I was curious because it was listed as brewed in 2013
(Just after opening the package)
Drink cold
Slightly yellow in color, not cloudy.
Slightly mature aroma.
In the mouth, it has a heavy richness with a savory aroma.
A refreshing dryness appears later.
The lingering aftertaste is long, and the richness remains in the mouth for a while.
The aftertaste is surprisingly refreshing.
There is no impression of aging at all, only a sense of maturity.
When I paired it with blue cheese and grilled eggplant with miso, surprisingly, the taste of the sake did not assert itself and the flavor of the side dish was more strongly felt.
I didn't feel much pairing, but I wonder what kind of snacks would go well with it.
As others have posted, it certainly tastes similar to apricot bean curd.
I would like to try it heated next time. EugeneReviewed previously 🎵Tasty as ever 😋🍶. EugeneIt tastes different from what I've had before because it's been aged ❗️The apricot flavor is gone, and it has a sticky mouthfeel reminiscent of old sake. But it's not too sweet 😋🍶. こるね<It has a rich sweetness and juicy flavor.
This is the personal brand of Yuji Hatanaka, the master brewer at Yamaoka Shuzo. The words on the label were written by Hatanaka's son, Toota, who was in second grade at the time.
I had a feeling it would be good warmed up, so I ordered both cold and warmed sake.
We started with the cold sake.
The aroma was a bit sweet and ripe, with a hint of Yamahai.
It's just the right amount of umami-sweetness with a happy hint of maturity. It has a matured feel, but it's not heavy with its 10 years of age.
When heated, it has a rich sweetness and a hint of sourness and bitterness. The umami spreads from there. It's great warmed! I drank it slowly, and it's delicious hot or warmed up in the sun.
If I were to compare it to Ghibli, I'd say it's a pod from "Arrietty the Borrower". I'm Arrietty's father, and although I'm 61, I don't feel my age. He's also a craftsman type, reminiscent of Toji-san. I don't know what kind of person Hatanaka-san is. But I'm sure he loves his child just the same.
Satisfaction: ★★★★☆
I`ll post the full version on the blog, complete with character images and such. If you'd like, you can search for "korune sake" or come from the link in my profile section.
EugeneThis is a local sake that I learned at an izakaya in Miyoshi.
It tastes like apricot kernel in your mouth 😋 oldest EugeneIt's very tasty and clean and dry 😋Albums こるねGentle Ikizakushi Dry Taste
The mouthfeel is gentle, soft and sweet and sour. But from there, the delicious spiciness and lactic acidity that is just like a fresh brew spread out. It sublimates into a hint of sublimity at the end, and when you notice it, it's gone.
As you can see from the number "+8" on the sake meter, it's pretty dry. But it's easy to drink and the flavors are fantastic. I wouldn't say it's for beginners, but it's delicious.
This sake is the personal brand of Hirotsugu Hatanaka, the toji of the Yamaoka Shuzo brewery in Hiroshima who brews Zuikan. The flavorful characters on the label were written by the brewer's son, Duuta (who was in the second grade at the time). That's a very thoughtful note, isn't it? His son is in high school now. It won't be long before he can drink sake with his own name on it.
If I were to use a Ghibli analogy, I'd say Mr. Kita from "Earshot". He's a fellow musician of Mr. Nishi, Seishi's grandfather, and Mr. Minami, who wears a bow tie with a moustache and glasses. At first glance, he looks like an ordinary old man, but if you look at him closely, he's very tasty. His voice is Producer Toshio Suzuki, an evil puppet master of Ghibli. Oh, "evil puppet master" is a big compliment. If he hadn't been able to manipulate Miyazaki, there wouldn't have been so many masterpieces made.
Satisfaction: ★★★★ . 風薫るAs it is a mountain waste, it had a strong flavor and rice flavor.
I thought it would go well with teriyaki and other dishes with a slightly sweet flavor. RecommendedContentsSectionView.title
