Second visit to Noboru Sake Brewery, where refrigerators are lined up in a cramped space.
I took my time to browse through the items.
Kouei Chrysanthemum is a keeper, and as I was making my selection while talking with the owner, he introduced me to a special forest of windmills!

I don't know how to describe it, it's orikara but it's clean, elegant and beautiful 🍶.

Complex flavor, like a fluffy spread of umami at first, then sourness and bitterness intertwined.

After a couple of days, the sweetness is added to the umami, and the complex taste becomes a little less complex, and changes to a clean and crisp taste.
