I picked up AKABU for the first time in a long time. The amber label attracted me.
The aroma reminds me of pear and muscat.
It's an autumn rise, but it's not heavy and the low alcohol content of 13 degrees coupled with the lightness is a pleasure to enjoy. ☺️

Driving to Higashiomi with my wife
Visited Higashiomi Aito Margaret Station, a roadside station, for lunch
As I was rummaging around in the store, this caught my eye. They started a project a few years ago to reproduce sake from 444 years ago, and they are brewing it in cooperation with Kita Sake Brewery.
I tried it cold and lukewarm.
Cold: Almost no aroma.
The mouthfeel is a little sweet, but soon the acidity comes in and it finishes with a tangy, spicy taste.
Nukan (lukewarm): Aroma of rice, sweetness, umami, and a good nose.

Chose this sake while shopping at the supermarket.
Not too sweet for a sake degree of -35
I got the impression that the acidity outweighed the sweetness.
It was halfway through at room temperature, so I think it would have been better if it had been chilled.

We walked around the large site, which includes a cafeteria, a beer brewery, a Japanese confectionery, a snow room, and a sake brewery.
(Sake was not available for sale, so we purchased it in Minami Uonuma.

Golden Week Car Overnight Stay From Minamiuonuma City via Tsunan Town, we arrived at an atmospheric thatched warehouse.
While listening to various stories, we were allowed to drink the brewing water that springs from inside the brewery.
