Overnight trip by car to Murakami City, Niigata Prefecture
After enjoying salmon dishes at Izutsuya Kikkawa, I dropped by Tamura Sake Shop and bought a variety of items, and the owner recommended this one.
Hirata Shu, the toji (master brewer) of Taiyo Shuzo, tasted 10 different kinds of sake, from 60% polished junmai ginjo to 40% polished junmai daiginjo, and blended them to perfection. After receiving the explanation, we purchased the bottle.
The aroma was not so strong.
Slightly sweet, slightly sour
Slightly sweet, slightly sour, slightly bitter.
I felt that it was a combination of the best of both worlds.
