Driving to Higashiomi with my wife
Visited Higashiomi Aito Margaret Station, a roadside station, for lunch
As I was rummaging around in the store, this caught my eye. They started a project a few years ago to reproduce sake from 444 years ago, and they are brewing it in cooperation with Kita Sake Brewery.
I tried it cold and lukewarm.
Cold: Almost no aroma.
The mouthfeel is a little sweet, but soon the acidity comes in and it finishes with a tangy, spicy taste.
Nukan (lukewarm): Aroma of rice, sweetness, umami, and a good nose.
