Otome Fuji from Negami Sake Brewery in Shizuoka Prefecture. Purchased in Ito. Fuji and has a stylish slim blue bottle. It has a slight yellowish taste and a firm throat strength. It is said to be a limited edition sake.
Neko Masamune by Omi Shuzo, Shiga Prefecture. It has a cute 🐱 design. It is a pleasant sake with a soft aroma and a smooth taste. It is a cool and proud white cat sake just like the label.
Fukura Junmai Daiginjo, Fukura Shuzo, Tottori Prefecture. It was slightly yellowish green in color, with a unique rice aroma and a thin taste. The unique aroma disappears as soon as you put it in your mouth, so it is a sake that can be served with any food. I feel like I've been drinking a lot of sake that doesn't make a statement lately. (laugh).
Daiginjo Ayanami by Hakutsuru. It is clear and light, with a flavor similar to that of Kamizenjosui. It is an easy-drinking sake without any habits and goes well with any dishes.
Gifu Kakamigahara Hayashi Honten's Hyakujuro Junmai Sake, which they have been making since 2010. It was a delicious sake with a nice sharpness and a slightly fruity taste, just as the name "Dai-harakuchi" implies. Hayashi Honten is the first sake brewer in Japan to make sake using the additive-free lactic acid bacteria process.
A canned bottle of Kouzen Nyosui. Even in a can, it is stable and refreshing, just like water. It is a gentle sake with a gorgeous aroma and a mild taste.
Basho Junmai Daiginjo Midori from Gunma Prefecture's Nagai Shuzo. It was very easy to drink, with a gentle taste and sweetness. Now all I have to do is drink some more sake from Chiba and I'll have conquered the Kanto region. (lol).
Please let me know if you have any recommendations for sake in Chiba. I'm open to both hot and cold sake (lol).
Purchased at NewDays. It is an active sake made by Iwate Drunken Sake Brewery. It is nigori sake and has a strength of 20 degrees C. It has a nice sweetness like amazake and a strong alcohol taste. It has a nice sweetness like amazake and a strong alcohol taste. As stated on the can, it goes well with a little bit of citrus such as lime. It was "Yukikko", not "Yukikko".
Yamadanishiki Junmai Ginjo from Yokkaichi Miyazaki Honten, Mie Prefecture. Polishing ratio 50%. It was a pleasant sake with a clean sweetness and a rice aroma.
Junmai Daiginjo from Kyoto Kyohime Shuzo. Purchased at Donki for less than 1,000 yen. It was awarded the highest gold medal in the "Delicious Sake in a Wineglass 2021" competition. With a rice polishing ratio of 45, it was a high-cost sake with a sweet rice flavor and a refreshing taste.
Junmai sake from Saitama Hasuda Shinkame Brewery. It was served hot in a heated makase in collaboration with the Shinkame Brewery. This is the first sake from Saitama. The crisp, dry taste stands out when heated, but the alcohol taste lingers strongly in the mouth, so you may not like it. It's like the hot sake that our senpai used to drink at izakaya (Japanese-style pubs). I like it (laughs).
Kamizen Josui Junmai Ginjo from Niigata Shirataki Shuzo. I hadn't had it in a while, and it was so refreshing that I didn't remember it being so watery (laugh). But was it my imagination that the first sip felt scratchy in my throat?
The first bottle of the 2023 toast was a Junmai Daiginjo co-developed by the Coop and Hananomai Shuzo. It was a very light, easy-drinking sake made of 100% Yamadanishiki from Shizuoka Prefecture.
This is a very fine Yoshinogawa Special Junmai from Nagaoka, Niigata Prefecture, recommended to be served at around 15℃ and 40℃, so we had it lukewarm. It tasted even better when heated, with more sweetness. It tasted even better when warmed up, and I enjoyed it with some Kanazawa oden.
