2025.24th. Matsuo boast by Kangiku, which I have wanted to have for a long time. I bought it from a sake store in Chiba prefecture, as it is a local standard sake. It has a moderate sweetness with a distinctive bitter taste, a moderate bitterness, and a soft mouthfeel. Although it is a sweet sake, it is an easy-drinking sake that you will never get tired of drinking. I would like to drink it again and again. I would like to buy it again. Thank you very much.

2025.23rd. Koei Kiku's Miun, which we received again this year. It was delicious last year and I was looking forward to it. This year's sake had a fruity flavor reminiscent of lychee and strawberries, which was a little different from other Koeihiku's sake, and it was very tasty with the freshness that is typical of nama-shu. The design is also lovely, as if anticipating spring, and I love this bottle. This year's Koei Kiku is also delicious and I look forward to more in the future. Thank you for the treat.

2025.22nd. Houou Mita, which I receive for some reason. I bought the bearded seal that I was interested in for the lottery of Kako in Sandon. (By the way, Kako was not selected. Well, I guess I did. lol) I wondered why it was a mustache, and it seems that it comes from a feature of rice called Kame-iki. Kame-iki is said to be a mutation of Kame-no-o, but it has a very mellow sweetness that is completely different from Kame-no-o. It is said to have acidity, but the sweetness was stronger. It is a rice that makes you wonder how it evolved from Kame-no-o, but it tastes very similar to Omachi. The sweetness is also very nice. Whatever the circumstances, I am very happy to have found this sake. I think Kobayashi Shuzo is a wonderful brewery that always produces high quality and unique sake. It is very strange that the taste is the exact opposite of Senkou in the same Tochigi area. I would like to have Houou Mita sake again. Thank you for the sake.

2025.21st. This is the first time in about a year that I have had the pleasure of meeting you, Jikin. I purchased this bottle through IMADEYA's hanpukai, GUITO. It was also featured in Sake dancyu and we had it immediately. Jikin is a sweet sake, but it has a very beautiful mouthfeel and never loses its flavor. It is characterized by a fruity sweetness reminiscent of white peaches, and as is typical of Yamada-Nishiki, it has a gorgeous sweetness that is not too sweet, giving the impression of a very well-balanced sake. I was also fortunate enough to taste the special junmai on another occasion, and I would like to enjoy the difference in taste. It was a very delicious and satisfying bottle of sake. 2025.20th. Gagakuyo's active nigori sake. No, no, it is very delicious. I like sweet sake, but I like this kind of sake that is not too sweet, has a nice shwashiness, and you can taste the rice flavor. It has been a while since I have had nigori sake, but this is one of my favorite sakes of the year. Garakudai has always been a top-class dry (not sweet) sake, but even in nigori form, its character comes through. The bottle design is really cool, and it is a sake that you have to buy. It is probably easy to drink even for beginners. It is a very tasty sake that anyone can easily drink. Thank you very much for your kindness. 2025.19th. I bought it when I dropped by Kobe Shu-shin-kan for an event. Yes, it is a stable taste. This is the sake that I consider to be the best sake in the world. It is no exaggeration to say that I look for my favorite sake based on this. It is probably one of the sweetest sake in Japan. However, it is not too sweet, and the umami of rice, which is typical of sake, is expressed well. The sweetness is reminiscent of bananas in the umami lineage. Kobe Shu-shin-kan is an absolute must for those who visit sake breweries in Kobe. It was very delicious. Thank you very much.

2025.18th. This is the first time I have had Fukyu-Nishiki. I wanted to have something other than Senkou sake for the Risshun morning pressing, so I chose Fukyu-Nishiki, which is famous for its fu. It tastes sweet and fruity, like an apple. It tastes like apple juice for adults. It is very easy to drink and has a refreshing taste. I feel like I've learned something new about the brewery. I would like to buy it again next time I see it. Thank you very much.

2025.17th. Senkori is a sake I would like to have regularly lol. This time it is a modern Sanshiki, a sparkling sake. I heard that the Niki is more popular than the Sanshiki, but I found them both tasty. The Niki is more about the umami and sweetness of the rice, whereas the Sanshiki is more effervescent and refreshing on the palate. The most important accent is the sense of effervescence, which is very pleasant, as if the inside of the mouth is being washed away. I can also taste the citrus flavor and the depth of flavor that is typical of Senkyoku, so I think the center of gravity is different from that of Ni-shiki. Ni-shiki has a deep sweetness in the shwashiness, and Sanshiki has a delicious rice flavor in the shwashiness. I am very satisfied with the taste of both. I have the impression that Oirigarami and the sparkling sake are the top two in Sengoku Modern, followed by Nakadori. I am looking forward to more Sake from Sentori. Thank you very much.

2025.16th. We had our favorite Tomita Sake Brewery's Shichibon-yari Kinokan. This time, it was a draft sake. It is a classic sake brewery, but it has a pleasant aftertaste with a moderate umami and a lingering aftertaste. It is very easy to drink, and although it is not peculiar, it is a very addictive sake. This time, it was a draft sake, so it was fresh, crisp, and easy to enjoy. It was very delicious. 2025.15th. We received SNOW EXTRA again this year. The bottle design is slightly different this time, with dancing snowflakes. It is a very cute design! The taste is more cloudy than the Christmas version, with a stronger sense of sizzle and umami. The apple-like fruity flavor is typical of Akatake and is very tasty. It is a sweet sake, so I recommend it to those who don't drink sake very often. I am satisfied again this year. Thank you for the treat. 2025.14th. We were lucky enough to purchase a bottle of Hello World and opened it at a live performance with Mr. Usui of Sakelabo-channel. If we don't open it now, when will we open it? Kai-san described it as tasting like Pocari Sweat, and I could understand what he meant. It has a very cool and refreshing taste, and although there is of course alcohol content, I could strongly feel the lime-like coolness that is found in Pocari Sweat. It has an orikara flavor with a strong umami, giving the impression of a very easy-drinking food sake. It is difficult to describe the difference in taste from the past Hello World, but it is consistently very easy to drink and recommended for beginners. The fruity citrus flavor that is typical of Sentori is still there, and it tasted like lime. I was able to purchase two bottles, so next time I would like to try it after a while. It was a very tasty sake. Thank you for the treat.

2025.13th. The first Shinsei in 2025 is Cosmos. It was laid down for about 10 months. The label said it was supposed to be aged for 2 years, but I couldn't resist lol. No matter when I drink it, Shinsei-san is always delicious. 2 years was not possible, but I feel that the flavor is spreading after a little aging. It has a fruity taste reminiscent of pears and an elegant and beautiful mouthfeel. This high level of perfection is unique to Shinmasa. I hope they continue to run at the top of the times forever. No need to explain the detailed taste. It is a very delicious sake and I look forward to encountering it again next time. Thank you for the sake.

2025.12th. I've been wanting to have a nice heated bottle of Furozumi for a long time! I don't often get a chance to have heated sake, but this was my goal for a long time. I don't have a heating set, so I have to heat it up in the microwave and can't measure the temperature, but it tastes best when it's lukewarm. I can't measure the temperature, but I think it tastes best when it's lukewarm lol. The umami of the rice spreads softly in the mouth. It is a more classic sake, but it is not difficult to drink at all. I would recommend it even to beginners of heated sake! Kai-san from SakeLab Tokyo also recommended it. Kai-san from Sakelabo Tokyo also recommended it, and we would like to try their other heated sake. Thank you very much.

2025.11th. I had a modern Biao style from Edobori Sentori. It is still delicious lol. The Zero Shiki Nakadori was also orikara, but this one had more orikara and more umami. To be honest, all the moderns are delicious, but I think I like the Biao style the best so far. It has just the right amount of juiciness and is light enough to be drunk lightly, making it perfect as a mealtime sake. I look forward to more Sentori in the future. 2025.10th. My favorite Yamamoto "Do". Despite this appearance, it has a ricey feel, but is very light and has a subdued taste. It is fresh, not too strong tasting, and not too sweet. This year, I feel it is especially delicious. I mean, I feel like every brand this year has surpassed the taste of last year's lol. Yamamoto-san's sakes themselves tend to be fresh and not too rich in flavor, but Dobrok has a taste of rice added to it. If you drink it thinking it is dobrok, it may be a little different. 2025.9th. Since Sentori has been around for a while, we had a sake from another sake brewery. Rinne Tensei, which was delicious last year. The rice this year was Hachitan-nishiki. I don't have the best vocabulary, but it is very tasty. It is sweet, but not too sweet, and has a gorgeous flavor with a melon-like fruity note. It is fresh and very easy to drink. Last year it was made with Yamadanishiki, and I can't quite recall the flavor, but I remember thinking it was very good, and I was hoping to have it next year and beyond. I would love to purchase the 2026 as well. I am now wondering what the next rice will be. Thanks for the treat.

2025.8th. UA snowball finally opened the bottle. It's the first nigori sake in a while. As expected of Snowball, there are two choices: good or very good, but this time it is very good. The regular Yukidaruma is mainly Kame-no-o, but this one is mainly Yamada-Nishiki, and since it is an assemblage, the flavors are well integrated. The silky and gorgeous flavor spreads in the mouth. The difference between this and UA Snake is that UA Snake is 100% Yamadanishiki and not an assemblage. It is sweeter than UA Snake, but has a more cohesive flavor. It is a stable taste. 2025.7th. The last of the Hatsubatake series of Sentori Modern is Seme. In the Hatsubatake series, only the Nakadori was a Usa-nigori, and this Seshime was a clear sake like the Arabashiri. Generally speaking, Seme is said to have the most miscellaneous taste, but this sake did not have that. I have a stupid tongue, so I could not taste the difference between this sake and Arabashiri, but it is a normal tasty sake. It is the most standard taste of Sengoku, and it is a sake that you can drink on a regular basis without getting tired of drinking it. I am looking forward to drinking the first and second styles from now on. Thank you for the sake.

2025.6th. We received again this year, the Sansho Yamada-Nishiki Ninonosai. It is a stable standard sake. While I would like to drink Kako and Hozu sake, the Yamadanishiki Ninonosai is the best. Above all, it has the best cosmetics. It is low in regulation, but I feel that it best represents the quality of sake that San-do aims for. The unique minerality and the gorgeous flavor of Yamada Nishiki are in perfect balance. Hozasu has a wildness to it, and Kako has a chewiness to it. I would like to try the Kako sake in particular again, but the Yamada-Nishiki Ninonozo is a sake that you can drink on a regular basis without getting tired of it no matter how many times you drink it. If you want to know about your hometown, drink this first! If you want to know about Sansho, drink this first! It is not easy to get Sandon, but I would like to buy it again if I have a chance. 2025.5th. It is the Nakadori of the first tank series of Sengoku Modern. No, it is the best Sengoku Modern I have ever tasted. It has a light nigori-feeling that I did not feel in Sentori Arabashiri, and the umami is expressed more intensely. It has a citrusy taste that is typical of SENKYO, with a strong umami and freshness, and the Edo-style sake brewing process gives it a depth of flavor that is very satisfying as an everyday sake. It has more umami than arabashiri and is worth comparing. I would like to compare them again next year. We have high expectations for this year as well. Thank you very much for the sake.
