2025.132nd. This is a new sake from Omine. This time it was made with Yamadanishiki, which has a banana-like sweetness that is typical of Omine, but it is not just sweet, it is elegant and beautifully sweet. The freshness of the new sake made it easy to drink. I am sure it will be released in the coming winter months, and we can expect great things from it this year as well. 2025.131st. The first new sake is Junmai-shu from Akabu! Since new sake is always released relatively early in the season, the first new sake of the season tends to be Akabu every year, lol! The taste is fresh and fruity with a hint of apple, which is typical of Akabu. It is a junmai sake, so the umami is relatively strong rather than the aroma, but this time it had just the right amount of umami. As always, it is a delicious sake, and I think Akabu's junmai and junmai ginjo lines are the most cost-effective. It is reasonably priced, and you can really feel the characteristics of Akabu's sake. I haven't had the high-end line for a while...lol I think I will drink Akabu again. Thank you very much for your service!

2025.130th. This is the first Tasake I have had in three months. This is the first time for me to drink autumn sake, but it has a mild taste with a moderate sweet banana-like fruity flavor, which is typical of tasake. As an autumn sake, it may be my favorite this year. It tastes like sake, and I thought it would be delicious hot heated. This is the last of the fall sake, so I guess they will be opening new sake from now on. I would like to buy it again next year. Thank you for the sake.

2025.129th. This is the first we have had in a long time, Sanzo. This time it was a regular top-class shichinonosake, the highest level of this season, brewed by the ancient "shiori" brewing method. It seems to be brewed in the same way as the sake used in the legend of the defeat of the eight-forked serpent, in short, it is a noble brew. It is such a sweet sake that I drank it in gulps and even the eight-forked serpent fell asleep. This was my first time to taste a San-do kijoshu, and I was wondering what it would taste like, but it was rich and sweet. The taste reminds me of grapes like San-do's Yamadanishiki, but because it is sweet, I cannot taste the minerality or acidity characteristic of San-do. Personally, I like it, but if I were to drink it as San-do, I would probably prefer Ni-no-sho. I think that the higher regulation and higher price do not necessarily correspond to whether or not the taste is to one's liking. It seems that Hozu had the same regulation, and I was curious about it, but couldn't afford it... I would like to have it again if I have the opportunity to visit the next production. 2025.128th. My favorite Chrysanthemum. This time it is an orikarami of Denshogiku. It has the gorgeous flavor of Yamadanishiki with a lingering aftertaste. Since it is an ogurigami, the sweetness is stronger. It also has the bitterness that is typical of Kangiku, and is still my favorite sake. I am looking forward to another Denshogiku that is not orikara-mi. Thank you for the sake.

2025.127th. My favorite Sentori Classic, Type 2. I've had it before, so my impression is the same. I still like the not-too-sweet taste and mouthfeel derived from the classic Kame-no-o. The regular Zero and I-Shiki also contain ori, so the difference is not so clear, but this one is more silky. I am looking forward to the new classic sake, as new sake is coming out one after another. Thank you very much for your hospitality.

2025.126th. Shinsei's Yonotori, which had been laid up for a long time. Too good to be true lol. The place I used to buy it from has gone all-out lottery so I don't think I'll ever have the chance to buy it again lol. I used to be able to buy one out of every three times if I lined up at the store on a certain day, but now that there is a one-month application period and you have to apply for the lottery at the store, people who can't line up on a certain day can also apply for the lottery, and the ratio goes up. I can't afford that. I went out of my way to stand in line for over an hour early in the morning, and now it looks like I'll only have a chance at restaurants... I'll have to go to a certain restaurant in Akasaka lol. I've been complaining (lol) for a long time, but this year's hanpukai is called Yonotori, so I decided it was time to open the bottle. The taste is so clean and smooth that it is hard to believe that it has been aged for more than a year, and although it is a kijo-zake, it is elegant and moderately sweet. I think Yonotori is my favorite among Shinmasa's sake. I look forward to having it again at the next restaurant. Thank you for the sake!

2025.125th. My favorite Mimuro cedar Bodhidhara. This time, it is a dewy leaf style. It has an elegant and careful flavor, which is typical of Mimuro Sugi, and a deep taste derived from Bodai Hashiro. Since it is a dewy-leaf style, the aroma and sweetness are not flashy, but it has a complex taste with a hint of sweetness and a little bitterness. I personally like the taste and would buy it again if I find it again lol. Thanks for the treat.

2025.124th. It has been a while since I have had Yoshidagurau's kinpu. It was described as juicy, but the sweetness itself is moderate, with a slight wild taste. When served chilled, it has a sharpness, giving the impression of a sake suitable for a mealtime drink. The wild taste is understandable, since the Kinshi is made from ancient rice. I really like Yoshida Kurau because you can enjoy various flavors of sake. I want to buy again! Thank you very much for the treat!

2025.123rd. My favorite Koei Kiku and their new product, Anastasia Orange. This sake seems to be made with the idea of combining the flavors of Anastasia Green and Dusk Orange. It is refreshing and crisp, but also sweet and sour, as if you are biting into the flesh of an orange. I really think Mr. Toji Yamamoto is a genius at creating sake with the targeted flavor. It is more refreshing than the Twilight Orange, and I personally prefer this one. I would like to have it again next year. Thank you very much for the sake.

For the first time in a long time, there was a live broadcast on Sakelabo-chan, so we opened a bottle of SENKOKU MODERN ICHIKI with gold dust, which we received at the Sakelabo 10th anniversary party! It is a very limited product. Even though it is fire-ground, I didn't think it was a good idea to keep it around too long, so I'm glad there was a live delivery at this time of the year! It was great to see Sano-san for the first time in a while. Once again, congratulations to your children. The taste is my favorite Sentori Modern as usual, with just the right amount of citrus flavor, a calm mouthfeel, and very delicious. It's a collaboration between two of my favorites, Sentori and Sakelabo, so I almost ascend to heaven, but it's so good that I ran out of it right away. Speaking of collaborations, Hello World is also planning a 5th collaboration, which I am also looking forward to. Congratulations again to Sakelabo on their 10th anniversary and to Kai and Sano on the birth of their child. Thank you very much for your hospitality.

2025.120th. New product from my favorite Sengoku, Ura-Senko-Hanabi! I think they named it "裏" (裏) because the sparkler is a collaboration with UA. However, this back side is totally different from the front side, which is called "Senko-hanabi". The sweetness is an assemblage of the two, and it is very elegant! I think I prefer this to the sparkler on the front. Of course, the sweetness is citrusy sweetness that is typical of Senkou, like honey lemon. I would like to have it again next year! 2025.119th. The original version of Kangiku's Ken Aizan! It's really an exquisite one! The name of the place is called "Ken-Aizan" after the mountain, which is difficult to grow only in Hyogo Prefecture, but it was successfully grown at the foot of Mt. It is a very rare rice, and only Kurakuraku and Kangiku are allowed to use it. We were able to get such a valuable sake two years in a row. The taste is rich and mellow, like Aizan, with a fruity taste like a grape. It has a lingering taste that raises the level of happiness. The richness is further enhanced by the fact that it is a blend of two different varieties. The slight fizziness was also excellent and superb. I am looking forward to another one next year! 2025.118th. This year, Mikumari has released a nigori sake version. Kai from SakeLab recommends it, and it's so good you can't afford not to buy it! Not just for beginners, it is introduced alongside sakémari and others, and I think it would be a satisfying sake for those who drink sake often. I like Hououmida's Mikumari, which is not too sweet, yet still smooth and has a slight schwashiness to it, but this Cloudy version is more advanced and silky as well. It is so lively that you would think it was a new wine, and it goes well with the grape-like sweetness that is typical of Mikmari. It is a taste that will make you like Mikumari even more, and I hope they bring it out again next year. Thank you very much for your hospitality.

2025.117th. Hibi, which we have not had in a while, is a Hozu that was provided by Hana-no-Ka Brewery in Sanriku. Hinode Matsumoto of Hibi Brewing has been taking great care of rice since his days at Matsumoto Sake Brewery, and I have the impression that he is a person who brings out the full potential of the rice. This sake also expressed the characteristics of Hozu well. From the time of its origins, Hozu has had a wild flavor, neither sweet nor classical, with a distinctive umami taste, which was also evident in the Nichinichi. The Hohomasu rice had a mineral taste due to the influence of Mt. Aso, but the Nichinichi had a direct wild flavor. It is not unpleasant at all, but has a umami that is different from dry sake, as if the sweetness was taken from a sweet sake. Although it is a dry sake, it seems to have something in common with Hinakami's Aki-agari and Shichibonjari. I like all Hinohi sakes, but this one is my personal favorite and I would like to have it again. Thank you for the sake.

2025.116th. This is the second bottle of UA Kuwagata bubbly this year. It is getting much cooler, so we had the second bottle. I was going to have it at the beginning and the end of summer. After all, the impression of the taste changes when it gets hotter and when it gets cooler. It is the same kind of citrusy lemon squash bubbly, but at the beginning of summer it tastes refreshing, and at the end of summer it reminds me of the hot summer. When I first tasted it, I had the impression that it tasted better in the mouth than in the taste, but now that I've had it a little longer, I can really taste the flavor, and it is as good as I expected. I am looking forward to next year's UA Kuwagata. I wonder what kind of taste it will have. Thank you very much for your kindness!

2025.115th. This is the second bottle of Imadeya's hanpukai sake, Houou Mita. I guess it is not that much different in taste from the one we had in July. It is an assemblage, so the good points are combined and the negative points are eliminated. It is a very cohesive sake with no corners and a beautiful sweet taste. It is not a very distinctive sake, but it is easy to drink. It was a treat.

2025.113th. Hirakou Sake Brewery's Hitakami, which I have been a big fan of since the Sakelabo 10th anniversary event. This is the autumn harvest. It has the image of a clean, dry sake that goes well with fish, but this one has a mellow flavor like the collaboration sake with Tomita Sake Brewery that we had at the event. I have the impression that the aging process has mellowed the flavor of this sake, but I like it. It is not sweet, but just mild enough to give a good sense of umami, which is my favorite flavor. I love fruity sake like Senkou, Shinmasa, Koeikiku, and Kangiku, but I also love dry, mellow sake like this. I would like to have this kind of sake again. Thank you for the sake.
