2025.31st. This is a sake from IMADEYA's hanpukai. It seems to be from Aichi Prefecture, and it has been a long time since I have tasted sake from Aichi Prefecture. The taste is a beautiful sake with a rich umami flavor and is very drinkable. The taste of sake in Aichi Prefecture is also strong, and I remember that Sora also had a strong taste. I think Kuheiji's taste was different, but I don't remember it. Fruity flavors are booming these days, but this sake is very tasty and expresses the taste of rice, which is typical of Japanese sake. 2025.30th. The calendar says that winter is ending, and it is still cold, but this is the last snowball. It had been laid down for more than 3 months since we bought it, but it still has the bubbly and silky feeling, and the deep flavor and umami that only a sake made from the original sake brewing process can have. After all, this year's Snowball is even better than last year's. I won't go into the details of the flavor, but I have high expectations for next year and beyond. Thank you very much!

2025.29th. I finally got to try the Musou, which was recommended by Kai of SakeLab a few years ago. My first impression was that it was a very typical sake, yet it had a fruity taste that I loved. Although it is described as dry, it is not light and dry. You can taste the umami of the rice so much that you wonder if it is really dry. Compared to the sweet sake, it is not as sweet, so I guess it is dry. It was a very delicious sake and I would like to buy it again. Thank you for the treat.

2025.28th. UA collaboration with my favorite SENKYO. I feel that the name "United Arrows" is so well known as "Sake"! I feel it is so well known that it can be said "United Arrows means Sake! I have been purchasing sake from Asano Sake Shop recently. It tastes like calpis soda, and the assembled taste is delicious. The acidity and sourness that is typical of Senkyoku are still present, and I like it better than any of the UA 1sts I have had in the past. This may also be the result of the Edo process. 2025.27th. We opened a bottle of our favorite Nagi by Kangiku. Kai of SakeLab recommended this as one of this year's spring sake, and we wanted to open it as soon as possible. The taste has the apple-like flavor and unique bitterness typical of Kangiku, yet it is fresh like a spring sake, and combined with the silky taste from the light nigori, it is very easy to drink and gobble up. Dangerous! I was able to buy two bottles this year, so I will enjoy the other one a little later. I always want to drink Kangiku's sake, so I always try to have a bottle on hand. 2025.26th. This sake was recommended to me by a liquor store I passed by for the first time in a while. It is made by Fumikiku Sake Brewery, which also has a brand called Haneya. The taste is juicy and light, just as the label says. It is in the sweet category and tastes like melon. If you like sweet sake, I may recommend this sake as it is easy to drink. It is a so-called royal road sweet fruity sake. Personally, I prefer a more peculiar taste, but this is also possible. I would like to drink it again including Haneya brand. 2025.25th. As a believer of Sentori, I have to have this one by all means. It is probably Sentori's modern specs, and since it is a draft sake, it is the equivalent of a zero. It is bottled and shipped freshly pressed, so it is very fresh and has a slight effervescence, and has a gorgeous and deep flavor as if it were made with Yamada Nishiki. It has a citrusy flavor that is typical of Senkyoku, and I love it. It is a taste that can only be enjoyed during the current season and is very satisfying. 2025.23rd. Koei Kiku's Miun, which we received again this year. It was delicious last year and I was looking forward to it. This year's sake had a fruity flavor reminiscent of lychee and strawberries, which was a little different from other Koeihiku's sake, and it was very tasty with the freshness that is typical of nama-shu. 2025.22nd. Houou Mita, which I receive for some reason. I bought the bearded seal that I was interested in for the lottery of Kako in Sandon. (By the way, Kako was not selected. Well, I guess I did. lol) I wondered why it was a mustache, and it seems that it comes from a feature of rice called Kame-iki. Kame-iki is said to be a mutation of Kame-no-o, but it has a very mellow sweetness that is completely different from Kame-no-o. It is said to have acidity, but the sweetness was stronger. It is a rice that makes you wonder how it evolved from Kame-no-o, but it tastes very similar to Omachi. The sweetness is also very nice. Whatever the circumstances, I am very happy to have found this sake. I think Kobayashi Shuzo is a wonderful brewery that always produces high quality and unique sake. It is very strange that the taste is the exact opposite of Senkou in the same Tochigi area. I would like to have Houou Mita sake again. Thank you for the sake.

2025.21st. This is the first time in about a year that I have had the pleasure of meeting you, Jikin. I purchased this bottle through IMADEYA's hanpukai, GUITO. It was also featured in Sake dancyu and we had it immediately. Jikin is a sweet sake, but it has a very beautiful mouthfeel and never loses its flavor. It is characterized by a fruity sweetness reminiscent of white peaches, and as is typical of Yamada-Nishiki, it has a gorgeous sweetness that is not too sweet, giving the impression of a very well-balanced sake. I was also fortunate enough to taste the special junmai on another occasion, and I would like to enjoy the difference in taste. It was a very delicious and satisfying bottle of sake. 2025.20th. Gagakuyo's active nigori sake. No, no, it is very delicious. I like sweet sake, but I like this kind of sake that is not too sweet, has a nice shwashiness, and you can taste the rice flavor. It has been a while since I have had nigori sake, but this is one of my favorite sakes of the year. Garakudai has always been a top-class dry (not sweet) sake, but even in nigori form, its character comes through. The bottle design is really cool, and it is a sake that you have to buy. 2025.19th. I bought it when I dropped by Kobe Shu-shin-kan for an event. Yes, it is a stable taste. This is the sake that I consider to be the best sake in the world. It is no exaggeration to say that I look for my favorite sake based on this. It is probably one of the sweetest sake in Japan. However, it is not too sweet, and the umami of rice, which is typical of sake, is expressed well. The sweetness is reminiscent of bananas in the umami lineage. Kobe Shu-shin-kan is an absolute must for those who visit sake breweries in Kobe. It was very delicious. Thank you very much.

2025.18th. This is the first time I have had Fukyu-Nishiki. I wanted to have something other than Senkou sake for the Risshun morning pressing, so I chose Fukyu-Nishiki, which is famous for its fu. It tastes sweet and fruity, like an apple. It tastes like apple juice for adults. It is very easy to drink and has a refreshing taste. I feel like I've learned something new about the brewery. 2025.17th. Senkori is a sake I would like to have regularly lol. This time it is a modern Sanshiki, a sparkling sake. I heard that the Niki is more popular than the Sanshiki, but I found them both tasty. The Niki is more about the umami and sweetness of the rice, whereas the Sanshiki is more effervescent and refreshing on the palate. The most important accent is the sense of effervescence, which is very pleasant, as if the inside of the mouth is being washed away. I can also taste the citrus flavor and the depth of flavor that is typical of Senkyoku, so I think the center of gravity is different from that of Ni-shiki. Ni-shiki has a deep sweetness in the shwashiness, and Sanshiki has a delicious rice flavor in the shwashiness. I am very satisfied with the taste of both. I have the impression that Oirigarami and the sparkling sake are the top two in Sengoku Modern, followed by Nakadori. I am looking forward to more Sake from Sentori. Thank you very much.

It is a classic sake brewery, but it has a pleasant aftertaste with a moderate umami and a lingering aftertaste. 2025.14th. We were lucky enough to purchase a bottle of Hello World and opened it at a live performance with Mr. Usui of Sakelabo-channel. If we don't open it now, when will we open it? Kai-san described it as tasting like Pocari Sweat, and I could understand what he meant. It has a very cool and refreshing taste, and although there is of course alcohol content, I could strongly feel the lime-like coolness that is found in Pocari Sweat. It has an orikara flavor with a strong umami, giving the impression of a very easy-drinking food sake. It is difficult to describe the difference in taste from the past Hello World, but it is consistently very easy to drink and recommended for beginners. The fruity citrus flavor that is typical of Sentori is still there, and it tasted like lime. I was able to purchase two bottles, so next time I would like to try it after a while. It was a very tasty sake. Thank you for the treat.

2025.13th. The first Shinsei in 2025 is Cosmos. It was laid down for about 10 months. The label said it was supposed to be aged for 2 years, but I couldn't resist lol. No matter when I drink it, Shinsei-san is always delicious. 2 years was not possible, but I feel that the flavor is spreading after a little aging. It has a fruity taste reminiscent of pears and an elegant and beautiful mouthfeel. This high level of perfection is unique to Shinmasa. I hope they continue to run at the top of the times forever. No need to explain the detailed taste. It is a very delicious sake and I look forward to encountering it again next time. Thank you for the sake.

2025.12th. I've been wanting to have a nice heated bottle of Furozumi for a long time! I don't often get a chance to have heated sake, but this was my goal for a long time. I don't have a heating set, so I have to heat it up in the microwave and can't measure the temperature, but it tastes best when it's lukewarm. I can't measure the temperature, but I think it tastes best when it's lukewarm lol. The umami of the rice spreads softly in the mouth. It is a more classic sake, but it is not difficult to drink at all. I would recommend it even to beginners of heated sake! Kai-san from SakeLab Tokyo also recommended it. Kai-san from Sakelabo Tokyo also recommended it, and we would like to try their other heated sake. Thank you very much.
