2025.144th. I was able to receive it again this year! We have had this every year since its debut! It is a sweet sake with a touch of bitterness, which is typical of Kangiku. It has a perfect balance of moderate sweetness derived from Gohyakumangoku, a slight fizziness, and creaminess. I would be happy to have it again next year! Thank you for the treat!

2025.143rd. Urasato light nigori was available again this year. Last year, I could only enjoy Urasato's light nigori sake, but I would like to enjoy other sake this season. The taste is a sweet sake with a slight nigori taste. However, the sweetness is not that strong, and the taste is light. The level of nigori sake is high this season, and this sake is no exception. Banshu Issen was more impressive, but this sake is also easy to drink and delicious. I would like to have it again. Thank you very much.

2025.142nd. I was a little curious about Tenmei before, so I decided to try it this season. As for the taste, it is beautifully sweet with a hint of sourness. Zero is a nigori sake, which is silky but also very well-balanced and tasty without being boring. It may be relatively my favorite. The direction of this sake is similar to that of Omine. It has a strong umami flavor, as it is a medium-bodied sake. I hope we will be able to enjoy it more and more this season. It is inevitable to repeat this season. Thank you very much.

2025.141st. Daimine's Winter Otoshiri has become a staple sake for this season. We have it every year and wonder why it is so delicious. This year's nigori sake has a high level of nigori, but even among them, you can feel the silky and bubbly taste in the elegant sweetness that is typical of Omine, and you can sense that the sake is alive. The sweetness has a banana-like sweetness, and Omine's sweetness is becoming more refined and delicious every year. I am looking forward to more from this sake brewery. Thank you for the sake.

2025.140th. My favorite Koei Kiku snoclet! I have the impression that this year's new sake nigori is generally of a high level, and Snokure was very tasty as well. On the first day of drinking, the flavor and sweetness were relatively restrained, and the sharpness of the new sake was emphasized. On the second day, the pear-like sweetness increases, and I personally prefer the second day because it is easier to drink. So far this year's new sake has not been a disappointment, and I look forward to more in the future. Thanks for the treat!

2025.139th. Snow Heaven, a.k.a. Tenmi, which I was able to get again this year! My post was omitted. I have the impression that the quality of the sake has somehow improved from last year. It is very easy to drink, with a nice sweetness in a silky taste. The nigori sake level is high this year, lol. The flavor has settled down once the toji has changed, but I could taste the soft vanilla-like sweetness that is typical of Amami. Personally, I liked this one. It might be a good match for Banshu Issen. I am looking forward to the new sake rush in the future. Oh, I hope I win the Jigori-Nigori.... It is the only one of the three major nigori that I have never had.... I wonder how people drink it... Thank you very much for your kindness.

2025.138th. The new Senkou Modern, style 4. I like the "4" because it looks like a demon's death lol. The specs are that it is a noble sake, which makes sense that it is from this season lol. They used last year's SENKYO MODERN for the ingredients lol. As for the taste, I have an image of kijoshu being very thick and sweet, but when I opened it, it wasn't that thick. Of course, it is darker than regular Ichi Shiki, but it is the type of darkness that does not make you tired of drinking it. It is not sweet, but more like aged lemon. It has a strong citrus flavor, like a lemon that has been aged rather than sweet. Organic Naturals also has a Kijoshu, but it has a stronger flavor than that. Personally, I like the taste, but it made me want to drink Sanshiki. It would have been great if we could have compared the drinks. I will buy it again the next time it is released. 2025.137th. The first orikagara of the new brewing year is Banshu Ikkyo! It is a brand that has recently become more fruity while still being dry, but it has become more to my liking than last year. It is not sweet, but you can taste the umami of the rice and it is silky. Last year, I felt this sake was a little lacking, but I really like this year's result. I think this season's Banshu Issen may be my favorite. There are not many dry sake brands that are not sweet and have the taste I like, so I am very happy with this sake. I will look forward to more new sake in the future. Thank you for the sake.

2025.36th. The third new sake of this brewing year is my favorite Sengoku Modern! I haven't had it for more than 3 weeks, so I feel like it's been a while since I had it. The taste is citrusy and fruity, which is typical of Senkyu. Modern is Yamada-Nishiki, and the taste is somewhere between a moderate classic and a strong retro. The second year Edobari also has a deep, raw yeast flavor and has a sense of being perfected as a standard sake. Since it is a new sake, it also has a fresh mouthfeel and is very easy to drink, making it the first sake that beginners to Sengoku should try. I have high expectations for Sengoku this season! Thanks for the treat. (By the way, the recently released Snowman was so popular that it seems to have been sold out instantly. lol Of course I have secured a bottle. lol)

2025.135th. Amami after a long time. The second bottle of new sake. This was the first time for me to drink Kuroten, but it tastes more refreshing than Shirouten. It has the fruity flavor that is typical of Tenbi, but at the same time, it has a slight sparkle that can only be found in new sake, making it an easy-drinking sake suitable for everyday drinking. High-end sake is fine, but in the end, I like this kind of standard sake for everyday drinking. I have already ordered Yukiten, and am looking forward to another year of nigori sake. By the way, I think I'll stop ranking nigori sakes this year. Tenbi is also relatively easy to find, so it has become a sake that I would like to use for everyday drinking as much as Sengoku. I am looking forward to drinking it again. Thank you for the sake.

2025.134th. This is the gold version of Kangiku's Denshogiku! This is a clear sake as opposed to the orikarami red version. I like orikara-mi sake, but I think I like this one better. The fruity melon-like taste of Kangiku's sake is present, while the bitterness is present, and the moderate sweetness and beautiful mouthfeel make it a Junmai Daiginjo. The Yamada-Nishiki has a gorgeous flavor, but it is also clear, clean, and well-balanced. I feel that the quality of the sake is improving year by year, and I have high expectations for the future. I would like to have it again next year. Thank you for the sake.

2025.133rd. The first time I received Waka Botan. The first sake from Oita Prefecture. It is from Imadeya's hanpukai. I heard that they use Hinohikari rice, but the taste is not very floral, not assertive, and mild. It gives the impression of being a "food sake," a versatile sake that can be paired with all kinds of food. Personally, I like sake that can be drunk on its own, and I am glad to have found this sake brewery's sake in Imadeya's hanpukai. It is not often seen in Kansai, but if I have a chance to see it, I would like to pick it up. Thank you for the sake.

This time it was made with Yamadanishiki, which has a banana-like sweetness that is typical of Omine, but it is not just sweet, it is elegant and beautifully sweet. The freshness of the new sake made it easy to drink. I am sure it will be released in the coming winter months, and we can expect great things from it this year as well. 2025.131st. The first new sake is Junmai-shu from Akabu! Since new sake is always released relatively early in the season, the first new sake of the season tends to be Akabu every year, lol! The taste is fresh and fruity with a hint of apple, which is typical of Akabu. It is a junmai sake, so the umami is relatively strong rather than the aroma, but this time it had just the right amount of umami. As always, it is a delicious sake, and I think Akabu's junmai and junmai ginjo lines are the most cost-effective. It is reasonably priced, and you can really feel the characteristics of Akabu's sake. I haven't had the high-end line for a while...lol I think I will drink Akabu again. Thank you very much for your service!

2025.130th. This is the first Tasake I have had in three months. This is the first time for me to drink autumn sake, but it has a mild taste with a moderate sweet banana-like fruity flavor, which is typical of tasake. As an autumn sake, it may be my favorite this year. It tastes like sake, and I thought it would be delicious hot heated. This is the last of the fall sake, so I guess they will be opening new sake from now on. I would like to buy it again next year. Thank you for the sake.

2025.129th. This is the first we have had in a long time, Sanzo. This time it was a regular top-class shichinonosake, the highest level of this season, brewed by the ancient "shiori" brewing method. It seems to be brewed in the same way as the sake used in the legend of the defeat of the eight-forked serpent, in short, it is a noble brew. It is such a sweet sake that I drank it in gulps and even the eight-forked serpent fell asleep. This was my first time to taste a San-do kijoshu, and I was wondering what it would taste like, but it was rich and sweet. The taste reminds me of grapes like San-do's Yamadanishiki, but because it is sweet, I cannot taste the minerality or acidity characteristic of San-do. Personally, I like it, but if I were to drink it as San-do, I would probably prefer Ni-no-sho. I think that the higher regulation and higher price do not necessarily correspond to whether or not the taste is to one's liking. It seems that Hozu had the same regulation, and I was curious about it, but couldn't afford it... I would like to have it again if I have the opportunity to visit the next production. 2025.128th. My favorite Chrysanthemum. This time it is an orikarami of Denshogiku. It has the gorgeous flavor of Yamadanishiki with a lingering aftertaste. Since it is an ogurigami, the sweetness is stronger. It also has the bitterness that is typical of Kangiku, and is still my favorite sake. I am looking forward to another Denshogiku that is not orikara-mi. Thank you for the sake.

2025.127th. My favorite Sentori Classic, Type 2. I've had it before, so my impression is the same. I still like the not-too-sweet taste and mouthfeel derived from the classic Kame-no-o. The regular Zero and I-Shiki also contain ori, so the difference is not so clear, but this one is more silky. I am looking forward to the new classic sake, as new sake is coming out one after another. Thank you very much for your hospitality.

2025.126th. Shinsei's Yonotori, which had been laid up for a long time. Too good to be true lol. The place I used to buy it from has gone all-out lottery so I don't think I'll ever have the chance to buy it again lol. I used to be able to buy one out of every three times if I lined up at the store on a certain day, but now that there is a one-month application period and you have to apply for the lottery at the store, people who can't line up on a certain day can also apply for the lottery, and the ratio goes up. I can't afford that. I went out of my way to stand in line for over an hour early in the morning, and now it looks like I'll only have a chance at restaurants... I'll have to go to a certain restaurant in Akasaka lol. I've been complaining (lol) for a long time, but this year's hanpukai is called Yonotori, so I decided it was time to open the bottle. The taste is so clean and smooth that it is hard to believe that it has been aged for more than a year, and although it is a kijo-zake, it is elegant and moderately sweet. I think Yonotori is my favorite among Shinmasa's sake. I look forward to having it again at the next restaurant. Thank you for the sake!

2025.125th. My favorite Mimuro cedar Bodhidhara. This time, it is a dewy leaf style. It has an elegant and careful flavor, which is typical of Mimuro Sugi, and a deep taste derived from Bodai Hashiro. Since it is a dewy-leaf style, the aroma and sweetness are not flashy, but it has a complex taste with a hint of sweetness and a little bitterness. I personally like the taste and would buy it again if I find it again lol. Thanks for the treat.
