This is a Kinkyoku purchased at Takagi Shoten in Yawatazan. It has a cemedine type of suetaka, and the hint of aroma is a bit angular. The palate is dry and austere junmai sake, with a stimulating twang and no richness. It has a good sharpness. It is the best match for sukiyaki.

It comes in like water, with an elegant and moderate acidity that is impressive and sharp. The taste is not fruity, and the gap between the aroma and the taste may divide tastes.

Tenmei no Nakadori Sanggo. The orikomi appears to be a little hard. The fragrance is clear and clean, with a slight scent of rice. The overtone aroma is also quite clear. The mouthfeel is light and smooth. The umami flavor stands out on the palate, and the sweetness and acidity are very moderate. The sharpness is also good. The third issue of this season is already here... it's early... I've been drinking mostly sake from Tokyo recently, and I rarely drink sake from my hometown Fukushima, but Tenmei is a brand I want to be conscious of and drink with which I have a connection.

This is an unfiltered, unfiltered, unblended, raw sake from the fantastic sake, Tokubetsu Honjozo Kaisen. The heady aroma is a mixture of a zing of alcohol and a sweet aroma like cider. The overt aroma has a hint of melon-like sweetness. The mouthfeel is thick and foamy with a tingling sensation on the tongue. The sweet, rich flavor ends with a peppery, spicy aftertaste. The spicy taste that makes your mouth tingle will be addictive.

Kihotsuru's special junmai. This brand seems to be popular these days. The color is slightly yellow. The initial aroma is sweet with a hint of fruity flavor. The overt aroma is more fruity, like pineapple or muscat. The mouthfeel is light and effervescent. The taste has a strong acidity and bitterness, but there is no lingering aftertaste and the impression is that it is not tiring to drink.

I discovered Yitky at my first liquor store, where I was shocked after drinking it on an autumn trip to Niigata. The aroma is grain-like with a thin, blurred yellow tinge. The taste is...yes, yes, this sourness! The one I had in Niigata had a strong yogurt-like flavor, but this one had a spreading sourness like that of a sake brewed in a traditional sake brewery. I was surprised at how delicious it was.

First time at Kurumasaka. The liquor store recommended this active nigori. It took about 10 minutes to open the bottle by repeatedly opening and closing the lid. The rice still retains its shape. The taste and alcohol is a bit harsh. It tastes good, but on a cold day like today, I would have preferred a sake that would relax my mind.

Kawazuru is made from Oceto, a rice suitable for sake brewing produced in Kagawa Prefecture. The aroma seems subdued. It seems to have a refreshing aroma with a hint of sourness. The sweetness and umami are well expressed but very elegant, kind of like a Japanese pear with little sweetness. This may sound strange, but is this the kind of sake you would want to drink after drinking sake?

Mature sake Kuramori that I drank at the Ozawa Sake Brewery's sake tasting place. I remember being impressed by the taste, but do not remember the flavor. I drank 1,2,3,4,6,11. The best Phoenix was good, but the cosiness of Soten was shocking. The branding on the bench at Sawai station is also nice.

Sawanoi's Honjozo Nama Nama Sake directly from the tank. It is a clear honjozo with a little melon-like sweetness and acidity. It was easy to drink. I was not expecting my wife to drink it so easily.

Heated sake drunk at Ozawa Sake Brewery. Specs are unknown. I guess it's a regular big dry sake. I like the Daruma bottle. The motsu-ni is also delicious.

I got my wish and visited Ozawa Sake Brewery in Okutama, where I purchased a bottle of Kameguchi Junmai Sake. This time it was junmai, but it is said to change from time to time. The aroma is subdued. The flavor is full of umami, with a sweetness of cucumber, and it is a fine quality junmai sake with a clean and crisp taste. When it is exposed to air for a while and the flavor and aroma open up, it is extremely tasty.

Queeen of lingering grass...what's that, three e's? The aroma is subdued. It has a nice yellow tinge to it. The wine has a pleasantly sweet, almost honeyed apple-like taste. What's that? I didn't know it had such a rich flavor. It gives a different impression, but it is very tasty.

I have long been curious about a Daily Yamazaki store on a street I pass by frequently that had a sign that said "Sake only available here". However, I never took a closer look at the sign because I felt as if I was a stranger to the liquor store. Finally, today, I took the time to check the sign, entered the store, and purchased a bottle. I was told that the sake brewer's association in Nakano Ward, Tokyo, commissioned a sake brewery in Fukushima to produce this sake. It is a pure honjozo sake, with a fruity aroma and a beautiful clear color. It has an elegant "sweetness" rather than sweetness, and a clean, refreshing taste typical of honjozo. For 1,250 yen, this is... So-called "dry". It is indeed dry. But what stands out is the elegant sweetness. This is delicious.

A steal of a brewer's sake from the Takai Sake Brewery in Niigata, Japan. It has a slightly floral aroma but a strong alcoholic aroma. It was said to be light and dry, but the melon-like sweetness is felt first on the tongue with a tender texture. The final taste was Niigata's typical light and dry.

New sake nigori from Zanso Hourai. The aroma is a banana type of cottage tropical fruit from yogurt. It is not sweet. But there is plenty of umami. It has a tropical banana flavor. It is not too strong. The overall flavor is very rich for a zanso.

A heated bottle of Toyobai. At lower temperatures, it has an apple aroma typical of Toyobai, but as the temperature is raised, the yogurt-like sour aroma becomes stronger. The taste is a refined junmai sake with a mild umami and sweetness. Personally, I like it warmed up a bit too much.
