Mt. Haruna in a cup of sake. Harunasan, a model of Mt. Akina that the tofu shop's Hachiroku runs through. The label also looks like a local sake. I have fond memories of visiting Harunayama with my wife many years ago before we were married. It has a strong alcoholic aroma, which is typical of honjozo sake. This is a royal roadside honjozo sake that is easy to enjoy and has no peculiarities. Oh my, this is a good sake. I've only had Gunma Izumi sake in Gunma, but this is really good. I guess the main sake is called "Ohai" (大盃). I'll keep that in mind.

Asahiyama cup sake. As is typical of Niigata sake, the taste is light and dry, but there is a rather firm sweetness and umami at first. It also has a melon-like flavor. Sake from famous breweries has a characteristic that seems to be popular with everyone, even for such a reasonably priced sake. I bought this bottle to prepare for a trip to Nagaoka this month, but it was just a delicious and wonderful bottle.

Toyobai's autumn sake. The aroma is apple-like, with a hint of autumnal flavor. It has a well-crafted, deep flavor, just like an autumn sake. I knew that autumn sake is delicious. It has a deep flavor, and each sake has its own character. The combination of this strong, guttural flavor and the apple flavor typical of Toyobai made me very happy. The first autumn sake of the year was, without a doubt, Toyobai. Still, I sincerely hope that the climate will catch up with the sake. It is probably still too hot. I want to enjoy autumnal delicacies and autumnal sake in a slightly chilly climate.

The back of Senkori, sparkler. I wonder if it's the back of the bottle if it's an origane? The sweet aroma is like a mixture of melon and lactobacillus. Oh my, what a gentle flavor. It has a natural sweetness like the makwari my grandmother used to serve me when I was a child. The gentle sourness is followed by an exquisite fizziness that may or may not be present. This is another great sake. It's like a mass of gentleness.

Hi Jay & Nobby. Sentori really amazes me every time I drink it. about 30 years ago in the Aizu region of Fukushima prefecture, a farmer's grandmother used to sell vegetables on a big cart. Makuwa-ri (Japanese cucumber) was often sold in summer.

Junmai Ginjo-shu from the south. The standard purple label. I thought it would have a modest yet gorgeous fruity aroma with a robust flavor, but what is it? It seems lighter than usual. Hmm? I had remembered that Matsuyama Mitsui from Ehime Prefecture was used for this one, but the endorsement only says "rice". I wonder if the rice used has changed due to the recent rice riots? Well, the flavor may be lighter, but it is still delicious.

Taman proudly brews its Junmai Namaishu using Tokyo rice and water. Although there is no sake rice produced in Tokyo, Ishikawa Brewery has brewed several sakes using food rice produced in Tokyo. This junmai sake is made with Koshihikari rice. It has a kinako-like aroma. Perhaps because the rice is not polished very much, it is full of complex umami flavor. It's sad that in sake terms it's often called miscellaneous flavor. It's a fluffy junmai sake with a bran-like...or maybe a gentle kinako-like grain type flavor. Delicious - I like this kind of sake.

Sawanoi's Soten. Beautiful pale amber color. Mild fruity aroma rises. No specific fruitiness? Beautiful sake quality with a smooth mouthfeel and a sense of wateriness. Elegant and gentle sweetness and umami, with a slightly strong astringency that comes in easily.

I bought this [sweetness-obsessed ⭐︎ mellow junmai ginjo] at Ishikawa Shuzo's Appreciation Day. Beautiful yellow-green color. The aroma is of the Wasanbon type. The mouthfeel is light and smooth. The taste is...sweet, this is sweet. It has a sugarcane-like sweetness with no fruitiness. The slightly greenish atmosphere is also cane-like. The finish is austere, so you don't get tired of drinking it. But how can they serve something different every month? I'm really impressed.

Today is Ishikawa Brewery's Appreciation Day. We received this Junmai Nama-nihonjunshu (pure rice sake) as the third month of the "Stamp Rally"! Stamp Rally], so we had this Junmai Nama Nama Sake. The lingering summer heat is still very hot, and although I first had a craft beer, Tama no Blessing Pilsner, there was a rather cool breeze, and I could feel the footsteps of autumn. That being the case, we decided to open a bottle of sake as well...so we opened a bottle of this one. It has a sweet melon aroma. The rich sweetness and umami spreads in the mouth as it thickens. The sweetness has a bitter taste like brown sugar, making it a very strong flavor. It is also delicious on the rocks. This is the 6th month of participating in the Thanksgiving Day. It was so hot that I was about to give up, but I was right to come. It seems like I eat dashimaki tamago (rolled egg) every time...

A special junmai of Zanso Horai using white malted rice. Transparent with a slight yellow tint. When it is cold from the snow, you can hardly feel the scent of the top of the bottle. In the mouth, the refreshing acidity from the white malted rice spreads easily with a fine bubbling sensation. It also has a slightly yogurt-like flavor. The lingering aroma is apple-like. Ah, it has been a long time since I have tasted Zanzou. I've been drinking mostly Tokyo sake for a while now. If I have more chances to visit Tanzawa or Odawara, my fever for Kanagawa will be rekindled...

Taman's signature junmai unfiltered, limited edition Takke label for the Fussa Tanabata Festival. Reasonably priced and delicious sake with plenty of flavor and sweetness. The candy color is also beautiful and pleasing. Tamanjushin has a lot of variations, so I tend to gravitate toward them, but after a long time, drinking the standard Junmai Unfiltered is a pleasant and relaxing experience, both in price and taste.

Kaisen's Junmai Namaishi Namaishi (pure rice) stored sake, Takke label, was purchased at the recent Fussa Tanabata Festival. It is a good quality sake with a refreshing yet umami and rich flavor. I really envy the people of Tamura Sake Brewery, where this sake without the Takke label is easily available at supermarkets and restaurants.

Sawanoi Junmai Ginjirushi. The standard "Dai-harakuchi" is good, but this one is also good. Koku-ami Junmai Sake. There is no particular description, but it has a richness and acidity similar to those of a sake made from a "nama-hashiro" or "kiokake" (a type of sake made from the same yeast as the original brewing process). I drank it rather carelessly because of its reasonable price and regretted it a little.

Junmai Ginjo from Tamura. Gentle apple-like aroma. Moderate and refreshing acidity with a mushroom-like richness typical of the Tamura brewery. However, although the acidity is high, it does not seem that strong, perhaps because the umami, richness, and bitterness are also strong? The balance of flavors really suits my taste.

This is the last souvenir of my trip to Aizu, Hanaizumi. The gentle aroma is reminiscent of bread and yogurt. The fine bubbles tickle and stimulate the tongue. The melon-like rich sweetness and flavor spreads with the fine bubbles and disappears with a full-bodied astringency. Sake from Minamiaizu is also delicious.

On August 9, I went to the Tanabata Festival in Fussa City with my second son. On the way home, I bought a cup of kasen at Seiyu. Aroma of old sake. It has a clear, dry taste with a sake-like peculiarity. It is attractive in that it can be drunk without pretension. But it's a little bit...addictive because it's a Josensen. It is confusing to think if it were Kasen. Kasen, Cup Kasen, Kasen....

Izumikawa is a souvenir from a recent trip to Aizu. It has a refreshing yet subtle muscat-like aroma. It is not too sweet, not too spicy, and has an elegant taste. It is refreshing and goes down easy. I've been sipping on it every day and am about to finish it. I wonder if I can buy some next time I go there. But there are other attractive sake in Aizu...

Selected dry sake from Yoshinogawa found at a nearby Seven-Eleven. It has a slightly sweet aroma with a tangy alcohol taste. Yes, this is another elegant and refreshing dry sake. The gentle sweetness and umami taste are also pleasing. I am planning to visit Nagaoka in September, so I was surprised to find it sold in my neighborhood when I was preparing for the trip.

Bandaiyoyo from the Shirai Sake Brewery. I usually buy Kaze ga Kiku, but on a recent trip to Aizu, I discovered it for the first time at the Gonoi Sake Shop in Sakashita-machi and bought it on impulse. It has a fresh green apple aroma and a beautiful light nigori. The taste is similar to that of "Kaze ga Kowaru," but the overall flavor is gentle. It has a strong but soft flavor due to the light nigori of nama-shu. The foaming sensation is also soft and gentle. This is a nama-zake full of gentleness. It is as gentle as a dried persimmon.
