Junmai sake from Kikusui. A can of Kikusui, which I have been enjoying recently. It has a crisp rice aroma. It has a crisp, dry taste with excellent sharpness. Funakuchi is good, but this junmai sake is also delicious. Kikusui seems to have some kind of tour facility, and I suddenly became interested in the brewery. However, it never occurred to me when I was in my twenties that I could enjoy Kikusui so much, which I did not find so tasty when I was a college student.

Today I was not able to purchase sake as much as I would have liked. The first sake shop we went to was closed for the day, and we didn't have time to stop by other shops. I had no time to stop by other liquor stores... Under such circumstances, I decided to at least buy something tasty that I could buy at the supermarket... so I bought a bottle of Selected Dry Yoshinogawa. The aroma was a little sweet, yet refreshing. The taste is deliciously spicy, or rather, deliciously hot and spicy. It was a good decision to drink it cold. It may seem a little harsh when served cold. It is amazing that they can make a standard sake with aluzoe at a reasonable price and make it delicious.

Today I visited my first sake shop, Yanaseya in Asagaya. I was expecting to taste Taman Juho Hiyadoroshi, but was a little disappointed to find that they do not carry it, but I was pleasantly surprised to find that they carry Yamori, which is also from Tokyo. So I had a glass of Yamori's hiyaoroshi. The aroma is soft and sweet. Contrary to the aroma, the taste is not too sweet, but has the richness of having been unfiltered and unpasteurized for one summer. The smooth, rich, yet moderately sweet flavor is so appealing that one could easily drink too much of it. Thanks to my first visit to a sake shop, Yamoru will become a familiar presence in my life.

Junmai Ginjyo Nama Shu from Yuki no Mayu. When I drank it before, it was brewed forest. This yogurt or bread aroma with a savory acidity. The color is beautifully hazy. In the mouth, the acidity spreads like yogurt and muscat. When swallowed, it has a very slight fizziness and bitterness. Delicious. I would like to try the higher spec one, but it is a bit expensive.

Sawanoi's hiyaoroshi junmai genzake. It has a very strong attack because it is a pure sake. For a moment, I thought, "Oh? Melon-like sweetness..." Before you can finish the thought, your mouth is dominated by a burning alcohol taste and a rich flavor. The strong flavor, combined with a slightly powdery texture, clings to the tongue. Is this Sawanoi's third autumn sake? I wish they would make more of an official appeal. I found out about this one when I went to a liquor store on a whim and found out at the store.

Akatombo of Senkori. It's been a long time since I've tasted Akatombo. Amazing, the aroma of grapes like wine. Well, the acidity spreads out in a sizzling way and is very tasty. The temperature is high today, so the strong acidity really soaks through. It is really great that Sentori's sake is relatively easy to obtain even though it is this good.

Sagaminada Aki-agari, which was purchased at the end of August. The aroma is mild rice type. I was looking forward to drinking it, but... Hmm? For some reason, it smells gassy. The taste is good, but it smells gassy... I wonder what this feeling is... Is it just a coincidence that this bottle is like that? Is it that cold sake is bad? Very sad.

On October 9, I attended the Fukushima Sake Festival held in front of JR Shimbashi Station and purchased this Kunikon Yamahai Junmai Ginjo-shu as a souvenir. It has a clean rice aroma with a hint of sweetness. The gentle sweetness and umami of rice spread pleasantly. Then, the strength that is typical of Kunigon follows, and it is sharp and crisp. I like Kunigon after all. At the Fukushima Sake Festival, I had both the bronze and gold labels, and was reminded of their deliciousness.

A souvenir from last month's Echigo Nagaoka Sake no Jin, Yoshinogawa's Toji no Yoru Honjozo. A bottle I purchased after tasting it and finding it delicious. Already, already, the attack is nothing. Nothing...nothing. There is no aroma. It is nothing. If anything, it's the world of wild man Okano's one-man through-pass. You are left behind. It is a time slip. It's a Hollywood kind of time travel. It's a forced make-believe story. It's also a bit like Okano's world. I swallowed it, and after a while, I thought, 'Oh, I'm drinking Niigata's light, dry sake. I realized that I was drinking a light, dry Niigata sake. When I tasted it, I didn't have this impression. This was obviously chilled too much. I know that it is better to drink it after the aroma and taste have opened up, but I feel like immersing myself in the world of through-passing.

I bought a bottle of Zanso Hourai hiyaoroshi at the end of August. I had been looking forward to drinking it after the weather turned to autumn. The aroma is not flashy, but it is gentle, elegant, and gently fragrant. Is it still an apple aroma? The taste has the strength of an autumn sake, with apple-like fruitiness that is typical of lingering herbs. The sake has a sake strength of +10, so the sweetness and acidity are moderate, but there are moments when both sweetness and acidity can be felt. This characteristic is more pronounced at room temperature than cold sake.

I heard that today, October 1, is Sake Day. Since I am not very familiar with it, I can't help but think of it as "Kyou~u wa nani no hi, fufu~" (What a day!) On such a day, I realized that I had made a mistaken purchase. I was supposed to buy a Yaegiku Aki-agari, but I bought a bottle of Nama-zake. Soft fruity aroma...sweet. Pineapple type? Ah...delicious...not a namaishige type, but it has a unique sourness, and the rice flavor comes out well. It seems to combine a big, syrupy sweetness with the elegant sweetness of the Wasanbon type, which is both familiar and refined... I've been really into Tokyo sake for the past year, especially Ishikawa Shuzo and Ozawa Shuzo, so this seems like an appropriate bottle for the day for me.

Tamura Sake Brewery is somewhat interesting these days. This is Kaisen Special Honjozo Hiyoroshi from Tamura Shuzo. I will have it warmed up. The aroma is classic sake, perhaps because it is a special bottle. A little acidity. It's spicy, spicy, spicy... but it also has a good amount of umami and sweetness. The richness of nuts and mushrooms, which is the point where Tamura Sake Brewery has come to attract my attention, can also be felt. It's so good! I love it. But I doubt it will be well received... If I may be irresponsible, I don't want them to pander to the times and make sake that is too modern. I want them to show us the range of their sake by going the route of "rich and delicious" with aluzoe. I think there is still a lot of potential for Aruzoe...

A summer vacation for a forty year old man. Will it be a good way to end it? Today, Saturday, September 27, my eldest son and I went to Ishikawa Sake Brewery's Appreciation Day. We won the first prize in last month's lottery for purchases over 3,000 yen, and received a Daiginjo cake. I used it as a card to keep my wife in a good mood. The limited edition sake for this month's Thanksgiving Day is a junmai (pure rice) autumn sake. It has a melon-like aroma with a strong umami and bitterness, and is not too sweet, making it easy to drink. The umami is rich and thick. Although I enjoyed the sweet limited edition sake during the summer, I was reminded how much I like this kind of sake with less sweetness and more umami.

Summer vacation for a forty year old man. Is this the antenna store of the Toshimaya Sake Brewery in Kanda Square? I wonder if this is the original. You can drink from noon at the Toshimaya Brewery. Yamori is a fruity, modern and delicious sake. However, it is only open for lunch or happy hour on weekdays, which is a bit sad, isn't it?

Summer vacation for a forty year old man. My wife and I went to a tasting at Tokyo Port Brewery, where we could sample almost all brands for about 250 to 600 yen. I was most impressed with Palla-Casey, as I have been enjoying classical sake, especially autumnal sake. I was impressed by its refreshing yogurt-like acidity. The sake brewed with Tokyo tap water and the sake brewed with water extracted from Tokyo air were both unexpectedly delicious. The only thing that caught my attention was the rather high price range.

Sawanoi hiyaoroshi. Probably twice-brewed, technically called "Aki-agari". The endorsement of Sawanoi is really very accurate. The sake is getting thicker... I don't get this phrase.... First of all, it's not too thick. But it is rich. And it has a fruity flavor. It has a depth of flavor that makes you think it would go well with anything except, perhaps, western sweets... I thought my life was turning around after 40, but I guess I'm still in the middle of my summer drinking season...

Late summer vacation this week. Kiyomasa's hiyaoroshi wine colors the weekday afternoon with its golden color. Soft aroma reminiscent of muscat. The rich sweetness of the wine, like that of a muskmelon, fills the mouth. Even after swallowing, it leaves a lingering aftertaste in the mouth. I was happy to be able to drink it in the afternoon on a weekday. And to be able to drink my favorite autumn sake from my favorite brewery, Kimasa...what could be better?

Takaoyama by Nakamura Shuzo in Akiruno City, Tokyo. Takao, and its hiyaoroshi (hiyagoroshi). Nakamura Shuzo is a sake brewery that we hope to visit within the year. The sake has a very old-fashioned aroma. It seems to be a sake for different tastes. A little powdery on the tongue. I drank it cold, but I think this kind of sake tastes better when it is heated up. So I tried it warmed up. The taste is rounded out nicely and the umami has expanded. I think I prefer a more pronounced acidity.

Souvenirs from the Echigo Nagaoka Sake Festival: cranes and fried tofu from Onda Sake Brewery. A bottle to go with thick fried bean curd, a specialty of Nagaoka. This time I grilled the fried tofu with miso and green onions, and served it hot according to the label on the bottle. It was very refreshing. It is a little acidic and has a very good sharpness, with almost no aftertaste. It goes well not only with fried bean curd, but also with Japanese fermented foods such as miso and soy sauce.
