Shoryu Hourai Kimoto Junmai. It has a sweet aroma of grains mixed with a fresh cucumber aroma. The taste has a sweetness reminiscent of melon and acidity typical of a sake brewed using the "kamoto" method, and the powerful umami of the sake spreads with a strong bubbling sensation. It is different from Zanzou Horai in terms of strength and full of umami. When there are both, it is hard to decide which one to buy. It is good when I can afford to buy both.

Fluffy white made with Taman's signature apple acid yeast. It has a refreshing aroma like a mixture of apple and lactic acid beverage. When you put it in your mouth, the sweet and sour taste spreads and is lightly sucked into the back of your throat. The nigori taste is also pleasantly bitter. Although the label and concept of this sake give the impression of being a change of pace, the sake has a strong sake-like flavor and is very enjoyable. This is a bottle that is so smooth on the palate that one should be careful not to drink too much.

My favorite Junmai Ginjo Yamadanishiki from Kimasa. There was a tasting and sale at Aji-no-Machidaya, and I was given an oinokuchi (small sake cup) with my purchase. Akikawa's sculpin is cute. The aroma has a tangy alcohol flavor. The flavor is well balanced and the umami is robust, making it enjoyable as a stand-alone sake or as a food sake. The slightly ugly sculpin is also charming.

This unfiltered, unfiltered sake from Kaisen is only shipped for pre-orders purchased through the Tokyo Sake Brewers Association's online store. It has a slightly fruity aroma mixed with an alcoholic flavor. In the mouth, it tastes sweet for a moment, but soon the intense astringency and spiciness spreads with a gusto. It is delicious with a unique mushroom-like richness. The texture is a little powdery on the tongue.

Sagaminada's special junmai unfiltered unpasteurized sake made with Miyamanishiki. It has a gentle fruity aroma of muscat or white grapes. The taste is also very delicious, combining grape-like acidity with the umami of rice that is typical of Japanese sake. Sagaminada is often served at events these days, and it has been a long time since I have purchased it. And a bottle is rather drastic, isn't it? Well, if it tastes this good, I will finish it soon...

A drink with a check-in leak. We intertwined a spring trip with a legal event and had a light drink in the lounge of the Ashinomaki Onsen Okawaso in the Aizu region of Fukushima Prefecture. Suehiro Junmai Ginjo. I don't remember it having much character, but I do remember it being tasty.

This is a figure cutter purchased at Saito Sake Shop in Tochigi Prefecture, where I stopped by on my way to a Buddhist memorial service. The uptitched aroma is modest and not very perceptible, but a melon-like aroma spreads on the palate. Dry...it is indeed dry, but it is carefully crafted so that it does not stand out. A very well-balanced sake. But the Saito Sake Shop has a great selection of sake. Since I had come all the way to Tochigi Prefecture, I was bound to buy some local sake, so I bought a bottle of Sentori and a bottle of Tatami, but they have an attractive selection of sake from all over the country. I was swayed in my decision to buy local sake.

Purple Space Pineapple Label. It was hot today, and I wanted to drink some kind of fruity, schwarzy sake, so I bought it. The aroma is exactly like pineapple...or let's dare to say "pineapple" here. The pineapple pattern masked by the purple space letters is a nice touch. It has a fruity but not too sweet taste, and the moderate fizziness and astringent bitterness are refreshing and delicious.

This is the brewer's secret sake draft that I purchased on Thanksgiving Day at Ishikawa Brewery. The hi-ire was drunk sloppily during the Thanksgiving Day and I didn't keep a record of it. Yogurt-like sour aroma. The rich sweetness fills the mouth. The mouthfeel is also a bit mellow, and when swallowed, it leaves a lingering aftertaste with astringency. I think the impression was similar to that of the fire-aged one.

Today is Ishikawa Brewery's Appreciation Day. The Kumagawa Ichiban of Taman Pride that we will be having there. Oops, this has the aroma of old sake. I would call it a yellow sake aroma... The taste is like an old-fashioned junmai sake, but it has a sweetness that reminds me of honey. It has a very tasty sake-like flavor. It is even more delicious since we have recently had a series of sake with a lighter sake flavor.

Taman's signature aged junmai nama sake. It has a full-bodied aroma like mushrooms and oak. When you drink it in the country, the aroma spreads like Western-style sake. It has a good balance of sweet and sour with a nice, mature, heavy flavor. The atmosphere is a little too westernized, which I personally find a little disappointing. I would like to see a little more sake-like flavor.

Kunifutsuru from Noguchi Sake Brewery, which has resumed sake brewing in Fuchu City, Tokyo. LaFrance-like aroma. The taste is refreshing and clean. Hazy Sake on Akagi Mountain. I miss the days when it was called the White Comet of Akagi... (a lie) A modest sweet aroma of grain type. The taste, can you feel it? Can you feel it or not? Kinryo's Junmai-shu made with olive yeast. It has a fresh aroma like muscat. It has an astringent and acidic taste like white wine. It is delicious, but it does not have much of a sake flavor, so there are different tastes. Personally, I prefer something with more sake-like characteristics, so I don't think I will be repeating this for a while.

Junmai Ginjo Omachi from Igarashi. The ginjo aroma is like pineapple mixed with citrus, but much milder. In the mouth, carbon dioxide gas spreads in a gulp, and the fruity sweetness and acidity spread together. After swallowing, a slight quince-like flavor can be detected.
