Today is Ishikawa Brewery's Appreciation Day, a stamp card that is issued for purchases of qualifying products for three consecutive months. This time, I received a four-pack of sake for completing the stamp card. I was surprised because I thought it was a smaller bottle. The brewery may have left it unsold, but the drinker was delighted. It has a mellow melon-like aroma and a sweet, rich flavor. I know this may sound insistent, but they offered us a 4-gou bottle for completing the stamp card... they are so generous that I have become a fan even more and more.

It's been a long time since I've had Shinsei. It's been three years. It was cosmos then, too. The spicy aroma of the wooden vat is in the air. It has an austere aroma like red wine. The spicy flavor of the wooden vat is also present in the taste, and combined with the strong acidity, it is very tasty.

Purple Space Ramune label. Took a bit of time to open the bottle due to the schwashwash. The aroma is subdued. It tastes more like a pineapple soda than a soda, with a fruity flavor. It is suitable for summer and perfect for a hot day like today.

Sawanoi's Okutama Spring-fermented Harazake "Delicious Harazake for Umeshu". I wanted to try ume sake this year and found this product. I decided to drink some of it since it was bought to be served cold or on the rocks. The sake is 20 degrees Celsius, so I drank it on the rocks. Well, since I drank it on the rocks, I couldn't really taste the aroma. The taste is not too sweet, but rather refreshing, just like the Honjozo Okutama Spring-fermented sake. Since it tastes so good on the rocks, I wondered if it would be too strong if I drank it as it is. I regret that I should have saved another 1 gou of sake to drink on the rocks.

A special junmai nama sake made with Matsu Midori's first kitashizuku. Timely, this morning I learned about the development of Kitashizuku from an audio clip I was listening to on my commute to work that was inspired by the Kamikawa Taisetsu Sake Brewery in Hokkaido. Apparently, depending on how it is made, Kitashizuku can be either mellow or refreshing. It has a mild apple aroma, which is unusual for pine midori. The taste is clear, with acidity and astringency at the forefront. However, there is an instant sweetness on the attack, and the core has a strong rice flavor. I was very impressed by this new taste of my favorite Matsumidori. Hmmm...what? But this was sold as a summer sake, but that doesn't mean we lost that favorite summer jun-dai, does it?

Sawanoi's dry nigori sake. The aroma of rice is modest. First, a sip...and then another sip. Then, a sip of the shime saba (mackerel). Then another sip of Sawanoi. The dry nigori (a thick, dry, bitter taste) disappears as it mixes with the acidity and fat of the shime saba (mackerel). Happiness...the breath escapes my lips at the flow of the happy time.

Tenranzan Junmai Ginjo purchased at a local liquor store. It is a bargain at 3,000 yen for a bottle. It has an apple-like ginjo aroma. On the palate, it has a smoky flavor of tanned leather or red wine, along with moderate acidity and astringency. This is a good buy, don't you think? I served it chilled, but it looks delicious even if it is well chilled.

Hamura by Ishikawa Shuzo, the brewer of Tamanjutsu. Purchased at the recent Ishikawa Sake Brewery Appreciation Day. The sweet aroma of this sake is very delicious. Wow! The fruity, refreshing sweetness fills the mouth, and the abundant umami bounces around with a freshness that is typical of nama-zake...it's just perfect.

Gunma Izumi Junmai Hatsushibori. A moderately large corkage is visible. The aroma of alcohol is tingling, mixed with a sweet aroma like calpis. It is rich and thick. Sweet, sour, bitter, delicious, and every flavor is strong. Is this Yamahai? It has a unique sourness and richness, but...there is no description of it anywhere.

Tanzanian cat and goldfish. Gentle LaFrance-like aroma. The sweetness spreads in the mouth, but not too sweet, harmonizing well with the fruity acidity. It has a light, low-alcohol taste, but I have the impression that a fair amount of astringency adds depth to the flavor. Despite the catchiness of the label, it is still a very strong sake, which makes me happy. It is a little disappointing that there was only the default black cat left this time. I'll have to go buy some more soon...

Zanso Horai made with Gohyakumangoku. Rich sweet aroma like banana mixed with LaFrance. In the mouth...Namahashi? Yamahai? The characteristic acidity is abundant and spreads with the umami. The final touch is the peculiarly delicious richness. Kuse...not a negative image, but a positive image that goes one step beyond individuality. It is an attractive, one-of-a-kind sake.

While I have been accumulating points at Nakano's Azino Machidaya, I have not had many opportunities to use them, so today I used my points to buy Tobiroki, which I do not usually drink very often. Years ago, I used to actively try to buy it whenever I had a chance to buy it, but recently I have been mainly interested in sake from Tokyo and Kanagawa, so my interest in this brand has been waning. Melon type Kamitachika. I wonder if it tastes like this? The taste is...I don't know...alcoholic and hot in the mouth. At first a little sweetness and acidity spread, but soon a burning heat spreads in the mouth. I was wondering if it was like this before...? I wondered. Wasn't it more like water?

Sawanoi's cool sake. What a beautiful bottle color. The sweet aroma is slightly refreshing, like rummy. When you put it in your mouth, it has a refreshing sourness...how can I say this, the freshness is already amino vital. It's not really, but the sweetness and acidity are so exquisite that it feels like the perfect way to rehydrate after a run.

Tamura's Ginga Ginga was purchased at a social event with breweries from the three prefectures of Tokyo held at the Tokyo Kotsu Kaikan on the 26th. It has a full-bodied aroma like mushrooms. The taste also has a savory richness and flavor like mushrooms and nuts. The day's tasting included about 30 different types of sake from Tokyo and Kanagawa Prefecture. Moreover, Rui Yoshida showed up as a surprise and it was a really fun event. I bought a bottle of Tamura because of its taste and the fact that it is difficult to purchase in general, but I found that all the sake breweries were delicious and made with conviction, which made me more and more interested in sake from Tokyo and Kanagawa Prefecture.

Sawanoi's standard Junmai Dai-harakuchi, its nama-shu. I didn't know such a thing existed. I had never heard of it before. The aroma of the top shelf has a twangy, alcoholic flavor. Wow, it brings a richness to my poor heart. It's very spicy...and fresh, with a little acidity...it's an eye-opening taste. No, this is already a beauty.

Thanks for your comments, Jay & Nobby. It did feel banana-like. I remember that I had to displace it because the endorsement said "banana" on the bottle. The liquor store owner also said that Hide Nakata can be seen in this sake.

Taman's pride: Junmai Nama Nama Sake. It has an aged aroma like tanned leather. It has an acidity and a powerful flavor that is typical of a mature sake. It has a rich sweetness like muscat mixed with the richness of ripe pineapple, and a burning alcohol taste and astringency in the mouth. The texture on the tongue is smooth rather than smooth...Shiro Yamaoka would call it sensual.

Takao Gokan bottle, a souvenir of hiking Mt. Takao on a paid vacation. A traditional sake with a fragrant aroma. It smells great when heated in the sun. It would be delicious heated up in the sun.
