On Saturday the 22nd, I went to Ishikawa Shuzo's Appreciation Day. I bought a bottle of Yamahai Junmai sake brewed in 2021. When I took my eyes off the bottle for a moment, it turned out to be a very heated akuchin. It was so yellow that it was like a mirin without any flavor. The sweetness, umami, and acidity are all present, and the 2021-brewed sake doesn't have that old sake-like flavor, but has an appeal that wavers between mature and old sake...like a fluctuation.
