Takaoyama by Nakamura Shuzo in Akiruno City, Tokyo. Takao, and its hiyaoroshi (hiyagoroshi). Nakamura Shuzo is a sake brewery that we hope to visit within the year. The sake has a very old-fashioned aroma. It seems to be a sake for different tastes. A little powdery on the tongue. I drank it cold, but I think this kind of sake tastes better when it is heated up. So I tried it warmed up. The taste is rounded out nicely and the umami has expanded. I think I prefer a more pronounced acidity.

Souvenirs from the Echigo Nagaoka Sake Festival: cranes and fried tofu from Onda Sake Brewery. A bottle to go with thick fried bean curd, a specialty of Nagaoka. This time I grilled the fried tofu with miso and green onions, and served it hot according to the label on the bottle. It was very refreshing. It is a little acidic and has a very good sharpness, with almost no aftertaste. It goes well not only with fried bean curd, but also with Japanese fermented foods such as miso and soy sauce.

Sawanoi hiyaoroshi. It's a freshly-pressed one. The aroma is soft and muscat-like. Mmmm, delicious. It has a firm flavor like Junmai Dai-harakuchi, and you can taste the fruitiness after one summer. Apple...pear...banana? It is hard to describe the fruitiness. But it is rich and hiyaoroshi-like, and the purchase of a bottle was a great decision.

Ofuku Masamune Junmai Daiginjo. On September 20, I participated in the Echigo Nagaoka Sake-no-Ten (Echigo Nagaoka Sake Festival) and stayed overnight in Nagaoka. The aroma is subdued, but when you put it in your mouth, it tastes sweet and sour like white grapes. Sweet and not too sweet...the exquisite sugar content keeps my sake cup full. Well, however, it was truly a sake-soaked time. I drank so much yesterday that I gave up tasting in the hotel's guest lounge. And today we drank again at the Yoshinogawa museum and at the Ponshu-kan in Echigo Yuzawa. That was fun.

It is a very hot day in Tokyo today. Where is the autumn that once showed its face? I decided to drink Kido Hiyayogoroshi, which I bought at the end of August, thinking of autumn. Well, it was cold sake. It was too cold, so the aroma was dull. However, when you put it in your mouth, an image of red apples runs through your mind. It also has a bit of astringency. It also has a richness that has been experienced over the summer (though it still has a summery feel). No, no, I have the impression that it has been a long time since Kido was produced. We are very thankful that they make reasonably priced and delicious sake.

An original project sake of Ajinomatidaya in Nakano Ward, Tokyo, a sake for the summer heat, developed between summer and autumn sake. And it is my favorite Kisho from Akiruno City, Tokyo. It has a sweet heady aroma like a mixture of melon and banana. The attack is smooth and sweet. The taste is quite rich. But strangely enough, after swallowing, it gives a light impression. This is probably due to the refreshing bitterness that lingers in the mouth. What is this? Yes, it does feel light after swallowing. This sake has a mysterious charm.

Long time no see Kokugon, a low-alcohol summer sake Swallow Label. The aroma is modest and refreshing. The sweetness is moderate and the light acidity spreads. Although it is low in alcohol, it still has the firmness that is typical of Kokugon. In fact, it has such a core that one wonders if it is really low-alcohol. It has a core. I really like Kokugen.

From the "Kanagawa 12 Breweries Autumn Thanksgiving Festival 2025", this is a white malted rice brewed Amano. The acidity was not that great for white malted rice. This brewery was rather crowded, so I was only able to drink this one. It was a pity.

From "Kanagawa 12 Sake Breweries Autumn Thanksgiving Festival 2025", a red dragonfly. It's been a while since I've tasted Izumihashi. Despite the catchy label, the sake is as solid as ever, which makes me happy. If I had to say something, I would have liked to have seen Raku-fu-mai and Shinryoku sake.

Shoryu Horai Kimoto Jun Dai Vintage 2018 from [Kanagawa 12 Breweries Autumn Thanksgiving Festival 2025]. This is also my favorite Shoryu Horai and Zancho Horai. I had all of them including the premier tasting except for the Zancho Hiyoroshi which is in my fridge at home. The vintage of Shoryu Hourai had a nice aroma with a lot of well-kneaded flavor. I wish I could have had it warmed up!

From the "Kanagawa 12 Sake Breweries Autumn Thanksgiving Festival 2025", Tanzawa Yama no Dew Ryoji. I had previously purchased this at a local liquor store. It is a refreshing sake, just like morning dew. The heated Yamahai sake was also good.

From the "Kanagawa 12 Breweries Autumn Thanksgiving Festival 2025", Matsumidori S.tokyo. The balance of modern and old-fashioned flavors is just right for me. I remember having all 5 kinds of sake including the premier tasting, but I think I forgot to take a picture of the standard Junmai sake.

Today, I participated in the "Kanagawa 12 Breweries Autumn Thanksgiving Festival 2025". The most impressive sake among the various tastings was Momokurado by Yoshikawa Brewery. It is a very sweet and acidic junmai sake with a sake degree of -35 at 90% rice polishing ratio. The impact of such a drastic sake is strong.

Minami no Nama-zake, an original summer sake from Azino-Machidaya in Tokyo's Nakano Ward. This is Machidaya's original sake, which is a departure from summer sake, which is too late for summer sake, and too early for autumn sake. It has a fruity aroma. But I could also sense the strength of the sake that has been laid down for some time. This is a surprise! A strong fizzy sensation hits you first. Not as strong as hiyaoroshi. Not as strong as hiyaoroshi, not as light as summer sake, and with an exquisite flavor. This is a bottle that can only be made at this time of year. And I have never tasted such a fizzy sensation that comes on ahead of the others.
