Sawanoi's new sake. Refreshing aroma like rum. It has a freshness typical of new sake with a strong astringent taste. I really wanted to drink it yesterday at the Ozawa Sake Brewery's brewery opening, but my schedule got crazy and I couldn't make it. However, I was very happy to find this sake in stock at Sanya in Asagaya. Even the honjozo is this tasty and beautiful. It's the best new sake I've ever tasted.

It seems to be aged for 150 days by Sawanoi. The aroma is faintly fruity. The taste is also sweet and sour and fruity, but it is matured and has a richness. It gives the impression of tropical fruits. Sanya in Asagaya has a variety of Sawanoi, which I appreciate.

Kinryo in Kagawa. I think I drank it once at a restaurant a long time ago, but I can't remember for sure. Olive yeast is another Kagawa specialty. This is exactly what it says on the label: Muscat. The aroma and acidity are fruity, almost like a white wine. This kind of wine is good sometimes.

Junmai Ginjo Unfiltered Nama Sake by Sawanoi. The green crab is a nice touch. The aroma of rice is clean and mild. Wow, it is a clear sake with a rich umami and a clear outline of sweetness, acidity, and bitterness. This is delicious. The balance of flavors is very good. Oh, I'm going to drink too much. This is Sawanoi's unfiltered, unpasteurized sake. Wow, this fresh fruity feeling and the astringent aftertaste are exquisite. Honjozo unfiltered unpasteurized sake. This is a cheap, tasty, and delightful bottle. When I see the crab on the label, I tend to reach for it. If it tastes good, the pleasure will be great.

This is my first Sawanoi. I had dared to avoid it because I was planning to go to the brewery one day to drink it, but I couldn't help but buy it. Mild aroma of rice. Slightly bluish. It has a refreshing taste like ramune for a moment, but it is clean and crisp and fresh. Good astringency. This is... no good... a delicious sake that I'm sure I'll get hooked on. Ahhh, I know it now. I know it's delicious.
