The water is really clear and it's so sharp and soft that it somehow feels sharp when it's well chilled 😆 lol. The taste has a beautiful rice flavor and sweetness, but it also has a refreshing fruity acidity, so it has a good sense of unity with the sharpness! Hakkaisan is also my local sake, and every year when I drink it, I realize that winter has arrived. It's delicious again this year ✨.

I don't think water in Tokyo gives a good impression at first, but the image of "Tokyo" is almost exclusively the 23 wards, and if you go deeper into the city, you will find nothing but mountains, valleys, and rivers, which is a ridiculous environment. The new classic is soooo good 😆. It has a light nigori-like lactobacillus-type richness and a nice aroma, a bit 🍌 like muscat, and the mouthfeel is soft with just the right amount of effervescence. The taste is like 🍇 on a rich 🍈 while being underpinned by a citrus-like acidity. I think there is a sweetness to it. The acidity gradually comes to the fore, so it is sweet and sour and refreshing to the end 😆. It's like this various fruits are condensed? I can't get enough of the flavor 🤤. I'm looking forward to a fire-roasted classic of this one ✨.

Today, we are really luxuriously opening and comparing the renewed Sentori Retro and Classic, and the Classic Solid before the switch...! I'll start with the Retro, but before that, I want to say that the classic SENKYO before the changeover is still very tasty 😆. I'm going to miss it so much when I think it's going to be gone.... I'll start with the Retro, but first of all, the bottle smells like wood when you open it. I can smell the woody aroma from the bottle. The taste is clearly sweet and sour, but you can also enjoy a deep sweetness and umami ✨. The sweetness at the beginning is especially beautiful and mellow, and the 🍌-like 🍌 flavor that comes through to the back of the bottle along with the acidity is also a nice touch! I really wanted to drink Daishinshu again, so I bought it and it's still delicious ✨. It has a nice aroma of apple and pear with a fresh sweetness, and the mouthfeel is soft with a little bit of thickening. I think there is also a slight thickening in the mouthfeel. The taste is just beautiful. The balance between the clean and full flavor of rice without any impurities and the sweetness and acidity like apple and pear is the best 😆. It's delicious. The second bottle is a good one that I bought as recommended by the liquor store owner...lol I opened it with high expectations because of the rave reviews, but also with a little apprehension because of the good price, but it turned out to be even better than I had hoped ✨. It has a beautiful aroma of rice with just the right amount of acidity and yellow peach-like fruitiness, and the mouthfeel is soft and clear. The taste also starts with yellow peach-like sweetness and acidity, followed by a beautiful flavor with no cloying taste, but the unique clear sake quality stands out, and you do not feel the strength of 18 degrees of alcohol at all. We are coming to Yura Onsen in Yamagata Prefecture for an overnight stay starting today✨. On the way, we stopped by a local sake shop, and the owner was so passionate about sake that you could tell he really likes sake, so he taught us a lot about it and we bought two different brands of Hakuro Tarusyu 😆 lol The first is a Miyamanishiki junmai ginjo, which is the brewery's signature sake and is said to be their "eternal idol." This is a sake where you can really enjoy the rice and water! It has a beautiful sweet rice aroma and is really soft on the palate. The softness allows you to taste the beautiful sweetness and umami of the rice, but the overall impression is very transparent. This transparency and lack of miscellaneous flavors that give a sense of the quality of the water is unique, and it is also a delicious sake that has a taste that is as good as its transparency ✨.
