I've kept it vertically and kept it nice and cold. When you loosen the screw a little, it comes up all at once ⛲. I opened the bottle slowly, opening and closing it for about 5 minutes It's schwashy, dry, and outstandingly delicious!

First time at San-Do-san, we started with Ninonozo. One sip and you will understand why it is so popular! I'm not a big fan of grain vinegar, and I'm not a fan of some of the traditional sake brewed from the traditional sake brewer's yeast. but this one tastes like a good combination of rice and sake. I would like to have it again!

Produced by Mashidaya Brewed by Iinuma Meizo, famous for their "Sagata Jungin Unfiltered Nama-shu made from Yamada-Nishiki I took my father there and he chose this one, which is also interesting because he chose it with a different sensibility than mine: ☺️ It tasted sweet and delicious and even people who don't like sake could enjoy it!

I couldn't resist and opened a bottle of the new nigori sake. I was looking forward to seeing how it would be like, the brewing concept being a sake with a sour taste like a lemon. I imagined it to be more sour, so I was betrayed in a good way 😋.

I bought it because I was curious to know what it was like with cosmos flower yeast. When I was talking to the liquor store, I told them that flowery drinks are like air fresheners, and they said that's not what they meant (lol). As for the taste, I don't detect any ginjo aroma, and the taste and aroma are mild. It was refreshing and the bitterness was followed by sourness in the latter half.

It's the season for new sake, so I have to empty the fridge, but it's hard to make progress with my training... 😥. In the midst of all this, here it is! It was my first time to drink Yamadaho sake, but as expected of Nabe-sama! It was very delicious! PS. My Windows photo editing application has stopped working. As a computer-phobic person, it is too difficult to solve this problem, and I can't imagine what the future holds.

The weather was so bad that there was not much we could do, so we decided to eat out for lunch. I don't have a lot of ramen restaurants to repeat. I want to try Ippinka again! And when I came home, I prepared for the night by processing mussels! I had already determined that I liked it, but when it came time to open the bottle, I was surprised to find that it had a nice sweetness and a nice flavor. It is delicious with just the right amount of sweetness and umami. It has a nice sharp taste, and after swallowing it, you will want to drink it again as soon as possible.

Shoninzawa spring water, one of the best 100 waters in Japan, is used as the brewing water. It is a junmai daiginjo brewed through long-term low-temperature fermentation and has a mild flavor and sweetness. About 10 years ago, I once walked to the source of the Shoninzawa Spring and was healed by the beautiful water, moss, and chirping of wild birds.
