Delicious!
Anyway, ginjo aroma of methyl acetate feeling
Junmai? Very clean and crisp.
Happy to be served with food!
If you see it, ask for it!
Very interesting and delicious!
It's hard to believe it's 85%, but it retains the richness of Omachi, with a ginjo aroma rarely seen in Hiroshima, and a beautiful finish with a lingering aftertaste!
I really hope they continue experimenting and commercialize this yeast!
For the sake of this yeast. Since you have found it, I hope you will continue to experiment with it and commercialize it.
Ryusei Lab. 1st Experiment - Hiroshima #6 Yeast - Omachi Rice - 60% Nama-zake
This sake was brewed with yeast collected from a closed brewery. Romance
First time drinking this interesting and favorite sake!
Ryusei seems dry for a Hiroshima sake, but this one has a totally different feel.
From the first sip, the aroma is mellow and fruity, with a hint of earthiness that passes through the nose. It has a presence through the throat. The sharpness is just right.
I will definitely buy it next time I see it.
I want to chase after it.
Surprise! Delicious!
Freshly opened and slightly effervescent, it has the umami and richness of rice, floral aroma, fruity sweetness, and ginjo aroma, but it comes beautifully without being overpowering!
I will definitely have this next time I see it!
Delicious!
Mellow and clean, with a hint of pineapple? Ginjo aroma with a hint of sourness and sweetness.
It has more presence than Yamaguchi's image, but still goes down your throat comfortably, just like in Yamaguchi.
I would like to drink it again next time!
This year's "Kinjaku/Kagakure-Nikkyo" is slightly more sour than before.
It feels a little more sour than before. (laugh).
It disappears after it goes down your throat, though. (laugh).
Impression is different from super dry, in a good way.
It is not dry or stimulating.
The rice flavor is clear from the first hint, and it is clean and crisp.
There is no stickiness.
It is especially nice when drunk chilled in summer.
The ginjo aroma of gorgeous, acetic acid methylation comes in a rush.
Even if it mellows out over time, it does not lose its splendor.
As expected of Mimuro cedar, this is Mimuro cedar!
The goodness of Tasake is well reflected.
From the first hint, it is both mellow and spicy (good), with a delicious flavor and gorgeous ginjo aroma, with a wonderful balance.
Super shocking!
From the first hint, you can feel the umami and richness of the rice, and the ginjo aroma of methyl acetate is pleasantly wafted into the nose.
Then, you are surprised to find out that it is polished to 92.
The elegant sweetness lingers in the aftertaste.
A masterpiece!

The sake is brewed with wild yeast collected from the cherry blossoms of Himeji Castle by the Faculty of Pharmaceutical Sciences of Himeji Dokkyo University and Ryuryoku.
My impression after a while after opening it and popping it open...
Delicious!
The sweet, flowery aroma and a hint of alcohol on the nose, while at the same time the dry, robust taste of a man's sake can be felt.
It is clean and has no bad taste or peculiarities.

Delicious as always. I buy it whenever I see it. Can't believe the price.
Slightly effervescent when opened, with a strong rice flavor and sweetness, and a moderate ginjo aroma.
It is beautiful and tastes good warm, but it should be served chilled.
