Very interesting and delicious!
It's hard to believe it's 85%, but it retains the richness of Omachi, with a ginjo aroma rarely seen in Hiroshima, and a beautiful finish with a lingering aftertaste!
I really hope they continue experimenting and commercialize this yeast!
