The same mild aroma as the first sip, soft rice flavor and moderate sweetness spreads with a little acidity, and finishes quickly with a hint of bitterness and a little alcohol spiciness. Overall, it is refreshing and easy to drink. It is good for accompanying a meal, but it may be too smooth as a stand-alone sake. The taste may have changed since the one I bought from a brewery in Ehime this time last year came out of the fridge. It went well with spicy grilled minos and Umaibo shrimp mayonnaise flavor.

The aroma does not change much in the mouth, and after the alcohol and weak acidity, the umami of rice comes easily. The aftertaste is stimulated by alcohol, but it is not an unpleasant attack, but rather a strange numbing sensation and heat. There is no significant change even when the temperature is set to room temperature. Should we wait a few days? The mark looks much like some airline company. Pouring it into a cold sake glass and bringing it close to the nose, the aroma is sweet and soft, like a peach. When you drink it immediately, you cannot sense any strong characteristics at first, but the deliciousness of the rice oozes out from the middle part of the bottle, and in the latter half, the fruity overtone appears in small waves. There is little bitterness or astringency. Overall, it has an elegant flavor typical of Junmai Daiginjos. Thank you very much.

Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake.
