The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

Rice used: Sasanishiki, Dewa Kirari, and Miyamanishiki grown in Yamagata Prefecture. I found this in a grab bag at a liquor store in my neighborhood, which has become a regular feature for me. It's not a great deal in terms of price, but I look forward to it because it contains brands that I don't usually buy. This one has the sourness that is typical of a traditional sake brewery, but when you drink it lightly, it is refreshing, and as you continue to drink it, the sweetness comes slowly. As the day goes by, the sweetness will increase even more. The sharpness is not that great, but it is not overpowering either, making it a good all-around sake. The price is less than 1,000 yen without tax, but I️ think it's quite competent.

This is the sake I got for New Year's. Last year, I received one with gold dust, but perhaps because I said that the gold dust didn't come out when I poured it into the glass, they gave me a separate one with gold dust (lol). The sake is fruity and refreshing like wine, as it has been awarded the highest gold medal in the "Delicious sake in a wine glass" award. I enjoyed it with cheese👍.

It was my son's birthday earlier this month, so we went to Nagano Prefecture for a visit during this holiday weekend! I think I have been to Nagano Prefecture a hundred times, but this was my first time in Nagano City. I found a great liquor store called "Shinshu Kuraudo" in the very magnificent Nagano station 💡. They have sake from all over Nagano 😘. They also have a corner shop, so if I hadn't come by car, I would have gone in there lol. A cute bear wearing an apple 🍎. The kids picked out a cup of sake with a cute illustration of Alkuma-chan 🍶. The taste was very refreshing! It has a gorgeous ginjo aroma and a crisp aftertaste. It's very easy to drink and has no habits, so if you're traveling by Shinkansen, this is definitely the one you want to drink on the train on the way home. I bought a few other bottles, so I'm looking forward to opening them 😊.

So sorry, so sorry... 🍶🍶🍶🍶 Nagano Business Trip Part ㊹ Tomorrow is the last night of my business trip to Nagano 🌃 as I have to pack up and head back to Ishikawa Prefecture 😀 44 check-ins 🎉 for Nagano's business trip sake. The last day in Suwa, I bought a cup of Alkuma which I don't remember when I bought it 😇. The aroma is mild and not very noticeable, but on the palate it has a gentle rice 🌾 flavor and sweetness😊 followed by a nice crisp acidity 😚👍This is a delicious sake 🥳. The label said "Don't drink too much!" but it was so good that it killed me instantly 🤣. The fourth picture is of lunch with my junior staff at the end of a business trip to Nagano 😊Tonkatsu Maruichi is famous in Suwa. It's hard to tell from the photo, but the meat is 3~4cm thick, but it was tender and full of juices 🥰.

With all due respect, I had never heard of this sake and it was unknown to me. When I opened the bottle, there was not much aroma. When you put it in your mouth, you can feel the sweetness and gradually start to feel the alcohol, and it ends up being dry. From the naming, you would expect it to be intensely dry. Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?
