Purchased at Yamasho in JR Ashiya station. I mentioned before that this liquor store is based in northern Kyoto and has a wide selection of sake from the Tango area, but they also have Kumi no Ura. It is rather sweet. Muscat and lychee-like flavor. It is fire-brewed but fresh. I'd like to try some of their fresh sake. I'm sure it would be delicious. According to the internet, it's unfiltered raw sake. It's true that it's on the lees for a fire-brewed sake. Sediment is noticeable.

I bought this simple labeled sake because I was curious. When warmed up, it has a robust lactic acid aroma, a gentle sweetness, and a full, rich umami. It has a nice lingering aftertaste that seems to soak in. At room temperature, it has a slightly sweet and sour rice aroma with a banana-like flavor. The juicy umami comes as a surprise as it rises from the mild sweetness. I thought it would be good warmed up, but it may be good in various ways.

At home. This is the third sake we were served at the sake tasting party. My first Nanbu Bijin. How can a sake from Iwate be called Nanbu? According to Wikipedia, it's because the location of the brewery was part of the Nanbu domain (Nanbu region) in the Edo period. My impression is that the alcohol is not strong, but the aroma is a bit characteristic. It's not fruity or grainy... I regret my lack of tasting ability and vocabulary. On the palate, the sweetness spreads, and the mouthfeel is smooth and the throat feels clear or light. It is a historical sake and I thought it would be heavier, but it was very easy to drink.

For today's sake, I chose a Junmai Daiginjo from Kuchiman 😀. We compared the tasting sakes, one brought to room temperature for tasting and one kept chilled, and this one for tasting brought to room temperature might taste better than the chilled one 🤣. The chilled one is just too beautiful to swallow without anything stuck to it😅. The room temperature one spread the sweet and delicious flavor and filled my mouth with deliciousness😇
