Yamayu" is the trade name of Shinmasa.

So, we went to a butcher shop in Aizuwakamatsu where we had reservations to buy assorted horse sashimi, and then moved on to the onsen inn.
I ate the assorted horse sashimi with miso garlic sauce dipped in soy sauce. No doubt about it!
And the sake tasted freshly opened, tangy, and refreshing. I almost finished the bottle with only a little left of the four-pack ✋.

I bought a small bottle in Apita supermarket last night.
I like the pleasant and gentle aroma. Rice, grain, honey, apple and bananas.
Flavor is drier, body is medium. Sharp acidity of apples and gentle sweetness of Yamada Nishiki.
I like it and would happily buy it again. very good price/performance. I want to visit Kyoto again.
