This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

This is also our first time to visit this brewery. I'm glad to see that they have a lot of unpasteurized sake. I completely forgot about the bad things at work and went into drinking mode. This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. I wonder if it would be sweeter to drink the alcohol by itself?

OSAKA-JO SAKE SQUARE 2023 It is a very crisp, dry, deep-flavored Ajiginjo. The aroma is subtle. The mellowness is more apparent in junmai sake. This is also a good sake. Today is Valentine's Day!👩‍❤️‍👨 This Sake paired very well with the filet mignon I prepared for my wife. There is a full mouth feel with umami. There is a light smoke flavor and wood. The aftertaste is short.

It comes with a gusto at first, and both the umami and sourness come into play. Certainly good to drink while washing off the fat from the meat 😀.
