Junmai Ginjo 🍶 Henohenomoheji 😅 All of it is made from Yamada Nishiki 🌾 without agricultural chemicals in its own fields. Fairly yellow, strong acidity, matured. Daruma Masamune-like. This is an apparently hard-to-find Akizuka sake. Since I had already had a draft of this sake before, I had to unlock the results of a terribly maniacal drinking comparison. I chilled it. It has a sweet aroma that harmonizes graininess and a sense of maturity. The modest mouthfeel reveals the clean acidity and caramel flavors typical of the sake's origins, and the full-bodied sweetness and rich umami slowly permeate the taste buds. It is delicious both lukewarm and hot.

At room temperature Oh, some kind of medicinal celery aroma. Slightly sharp acidity in the mouth. The sweet umami extends a little. Swallow and a slight sweet potato flavor. Today I had Tenho, a local ramen of Nagano prefecture 😋 I had the meat fried ramen🍜 and gyoza🥟😘The light ramen and gyoza went well together🥳Next I will try the dandanmen😙.

Junmai Daiginjo that is not like Yamada Nishiki. The sweetness is moderate. It takes some time for the flavors to develop. Personally, I've always had the impression that Yamadanishiki has a sweet aftertaste, but the dryness of the flavor reminded me of the diversity of Japanese sake. And even though it's supposed to be a little out of character for my taste, it was a dish that made me drink more! As the temperature rises, the taste is distinctly sweet at first and then dry (and crisp) at the end. It broke the stereotype that Yamada Nishiki is sweet! The brewery started brewing in 1922. The name of the brand was changed from the famous water "Horime-no-Ido" to "Horinoi".

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. At last! At last, Nara sake complete! The last one was 100㏄. It was a very impressive drink. However, one of the chopsticks is bent in a bow.... It has been bothering me for a while. My consciousness is pulled in that direction. Very hard to grasp lol. Also. There is no aroma. It tastes neither fruity nor sake-like. It is easy to drink and delicious. Yamatsuru-san, I was actually looking for a sake called "Nagaya-ou," which is a recreation of a 1300 year old sake. After all, it's not easy to find! Nakamoto Sake Brewery offers a sake brewery makamakai lunch by reservation only. I would like to visit there someday. This time, I had a chance to taste Nara sake from all 29 breweries! Thanks to Umashu-san, Nara Izumi Yusai-san, and Kintetsu Railway for making this possible. Thank you very much! I am glad that I was able to accomplish this before the end of the year! I love Nara sake! In a post a little while ago, I wrote that the water in Kaze no Mori was ultra-soft water. It's actually super-hard water. I am ashamed.... Here is the correction!
