Dokure Hiyoshi Oroshi Junmai Ginjo Shimanto River Headwaters Cave Enclosure. The aroma is a mild iso-type aroma that is a bit hard, but it seems to spread with air. The pleasantly smooth nose is followed by a strong acidity and umami, which leaves a strong impact in the mouth. The hints of bitterness and calmness in the back of the aroma are also to my liking. It is also good with a hint of sweetness in the background and a beautiful sharpness along with the sourness and bitterness in the aftertaste. Dokurei, which I always drink every year, is very good.

The alcohol content is 16%, so it comes with a bang. It's already winter on the Northeast Highway, it's better that there is no snow on the road yet! Today we went to a curry shop in Aomori... I bought this bottle at Belk's on my way to work because my body was in need of a drink. I got the impression that it is not a traditional sake, but a modern, clean or refreshing drink. And the specs are Rice used: Domestic rice (both rice and rice malt) Polishing ratio = 50%. Sake meter = around 2.0 Acidity = around 1.4 Amino acidity = around 1.1 (From the brewery's website) If you are going to drink a cup of sake, you want it to have this level of quality. This is a bottle from a long-established brewery in Handa, Aichi, which has been in existence since the Edo period.

Mishio Junmai Ginjo Omachi 100% Omachi produced in Okayama Prefecture Polishing ratio 50%. Alcohol content 15-16%. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.
