We had ours the other day too 😋 delicious 😌. おやまのやまThe aroma and taste are like a ripe peach, very juicy but still quite sharp and well balanced in the Sharaku style.
I think the Banshu Yamadanishiki is more sharp. おやまのやまFermented and matured aroma, special aroma, light, dry, bitter and sharp taste.
Because it was made to go well with fish, when paired with fish dishes, the sharpness subsides and the taste mellows out, giving it a somewhat addictive flavor. おやまのやまI can only describe it as delicious, with a balance and sharpness that's not half bad.

When I poured it into a boar cup, I could see the piquancy and my expectations were high 😋.
Oh, wow! I can feel a hint of apple 🍎, a full-bodied sweetness and a crisp acidity!
This is delicious 😍 and all voices agreed 🥹.
I was gulping down just the top clear liquid 😆 but when I mixed the oli, the sweet and sour taste and the bitterness added to it made the drink go down even further🤗Yummmm~!
I drank it after Genmai's, and while Genmai's Kinmon Nishiki was delicious, it was also a little too sweet for its richness 😅I realized again that we like this kind of refreshing taste 🤔.
The white dove brought me happiness and I'm going to become a dove chu devotee 😁I want to taste other doves too!

When I opened the bottle yesterday, it seemed to disappear as soon as I drank it, which left me feeling a little underwhelmed, but the second day after opening it, it was seriously badass and too delicious!
The aroma is reserved and clear, but very elegant, and the taste is crisp and light with good bitterness and umami spreading all over the mouth.

This was one of the first bottles that got me hooked on sake and introduced me to Sentori.
It was a shock to me because I am of the generation that has been drinking only what we now call "classic" sake since I was young.
It has a pleasant fruit-like aroma, a balance of sweetness, bitterness and acidity, and a sharpness that is typical of Japanese sake.
I thought, "This is already white wine!
Today's sake is too delicious!
