We had ours the other day too 😋 delicious 😌. おやまのやまThe aroma and taste are like a ripe peach, very juicy but still quite sharp and well balanced in the Sharaku style.
I think the Banshu Yamadanishiki is more sharp. おやまのやまFermented and matured aroma, special aroma, light, dry, bitter and sharp taste.
Because it was made to go well with fish, when paired with fish dishes, the sharpness subsides and the taste mellows out, giving it a somewhat addictive flavor. おやまのやまI can only describe it as delicious, with a balance and sharpness that's not half bad.

Nobby took a detour on his way back from his parents' house and captured it for me at Ikeda Sake Shop 🤗.
Finally my wish came true 🥹.

When I poured it into a boar cup, I could see the piquancy and my expectations were high 😋.
Oh, wow! I can feel a hint of apple 🍎, a full-bodied sweetness and a crisp acidity!
This is delicious 😍 and all voices agreed 🥹.
I was gulping down just the top clear liquid 😆 but when I mixed the oli, the sweet and sour taste and the bitterness added to it made the drink go down even further🤗Yummmm~!
I drank it after Genmai's, and while Genmai's Kinmon Nishiki was delicious, it was also a little too sweet for its richness 😅I realized again that we like this kind of refreshing taste 🤔.
The white dove brought me happiness and I'm going to become a dove chu devotee 😁I want to taste other doves too!
And the cute bottle of white dove has been added to Nobby's collection of empty bottles (3rd one) 🥰. マナチー

When I opened the bottle yesterday, it seemed to disappear as soon as I drank it, which left me feeling a little underwhelmed, but the second day after opening it, it was seriously badass and too delicious!
The aroma is reserved and clear, but very elegant, and the taste is crisp and light with good bitterness and umami spreading all over the mouth.
Sake is so deep and fun to drink because it changes after opening the bottle! おやまのやまFirst time drinking Kamo Nishiki, I started to get into the sake swamp and selected the "fresh" version because it was more fruity.

This was one of the first bottles that got me hooked on sake and introduced me to Sentori.
It was a shock to me because I am of the generation that has been drinking only what we now call "classic" sake since I was young.
It has a pleasant fruit-like aroma, a balance of sweetness, bitterness and acidity, and a sharpness that is typical of Japanese sake.
I thought, "This is already white wine!
Today's sake is too delicious!

There's a hint of sweetness, but what can I say, the acidity is outstanding! And a slight tanginess on the tongue 😊.

Easy to drink 😋. chapeOn the way back from my parents' house, my daughter and I went to Ikeda Sake Shop for the first time. My daughter's choice was the "I love sushi" guy and the blue Takachiyo. The sushi one has a cute label though💦.
The spring sake has disappeared and the summer sake is on its way! The blue bottle is so cool and summery 😁.
It is a flat polished unadjusted summer raw sake with 48% milled rice and 16% alcohol by volume. The aroma is cool and refreshing, or maybe it's the color that makes it smell like cider 🤔I personally don't like the aroma, so it's a little hard to drink... but the wife says it's delicious. After a few days the aroma settled down and I could taste the sweetness followed by sourness and bitterness and I also enjoyed it😊It's interesting how it tastes different as time goes by after opening the bottle😆That was delicious!
