The texture is relatively light and soft. A modern, light, hot sake. Delicious. When cooled, the acidity stands out and the umami closes down. I prefer it warmed because the acidity is more noticeable when it cools down and the umami is less pronounced. The rice flavor comes out in the front. Preference 4/5
